    I am taking a break from Scotland though l have a lot more distilleries and whiskies to review from the tour but that will have to wait. I am heading to Goa, India.
    This is a distillery and whiskey named after it's founder, Paul John. The buildings around Goa are noted for their old classic Portuguese architecture as is the distillery.
    I have not owned a bottle of Paul John but I have sampled it before at a favorite whisky bar in Victoria. I was impressed enough that I had to follow up with a bottle when the Paul John Oloroso Select single malt went on sale in Victoria. I had tried the Amrut Neidhal and the Fusion single malt as well but it was the Paul John that left an indelible mark.
    So what do we know about Indian whiskey that is different than Scotch? Whiskey aging in southern India has a loss of 8 - 10% per year to the "Angels Share" where as in Scotland it is 2 - 3% per year. The plus side of that is that the warmer climate allows the whiskey to interact with the wood in the cask at an accelerated rate. In Goa, India, it is over three times faster than it would be in Scotland. The down side of it is that it is not economically feasible to age past 7 years because you have already lost 60 to 70% of the whiskey in the cask to the "Angels Share".
    So we know that this whiskey was over 5 years in Bourbon barrels and 2 years in first fill Oloroso Sherry butts. So when you do the math this whisky could be equivalent to a 21 year old whiskey in Scotland. Well that's just mathematics and if we really want to know the truth we will have to get into the review.
