I'm from Bremen in Germany. The Hachez chocolate manufacture is nearly in the center of the historical part of Bremen (city). It is expensive chocolate and there are soo many kinds of it (also some with special flavours, like in the video).

That fig and mustard seed "sauce" and cheese combination is actually not that odd; if you've ever had a good classic cheese platter, it usually also includes fresh and/or dried fruits, nuts, jams and/or jellies. That fig/mustard sauce looks pretty much like a jam. 😊 You can also find similar combinations with more "gourmet" grilled cheese. A good quality cheese + thin layer of some type of fruit spread inside = yummy grilled cheese! Even a sharp cheddar with some slices of tangy crispy green apple is great!

The traditional mustard from my grandma's area is sweet and hot at the same time with visible grains/seeds in it - not at all like the yellow stuff you get at McDonalds...

The fish is delicious as is, but also on bread, rice, any other starch, or even a bed of salad. 😉 I just recently tested a variety of them, from honey mustard sauce, curry mango sauce, to horseradish cream sauce. That was interesting. 😄 For stronger beer from this area, I recommend trying Bitburger Pilsener! People who find Kölsch to be too light, usually love Bitburger. My boyfriend for example. 😁 I just checked, you can buy Hachez chocolate in the supermarket, to answer your question. Oh, and if you ever come to Cologne, go to the chocolate museum and visit one of the beer breweries, I think you would find that interesting. All the best to you guys!
The 1516 refers to the purity law, not how old the brewery is. Reissdorf brewery was actually founded in 1894. But there are old breweries. The oldest brewery in Germany is Weihenstephan which was founded 1040. The ten oldest breweries in Germany were all founded before 1266.
Kölsch is a very unique beer style. (Pronounced more like "Coal-Sh" Or "Kool-sh") It's an ale/lager hybrid. It can actually be fermented at a wider range of temperature than most other yeasts strains. The colder it is, the more lager-like it is and the more warm it is, the more it develops fruity ale-like characteristics. It isn't a super popular beer style compared to other German beers or thirst quenchers like Pilsners, but it provides a very unique break from something that might be too one-dimensional.
Not as widely popular I would say. In Cologne and the Rhineland it is by far the most popular type of beer (I live at the border between the Rhineland and the Eifel and here it is almost a religious war between Bit Pilsner and Kölsch drinkers. The once affiliating their families with the Eifel will only drink Bit and the once affiliating their families with the Rhineland will only drink Kölsch - and both will claim the other is the worst thing past D*sseldorf Altbier, which is commonly hated with passion and tradition by everyone)

Those fish conserves aren't really regional food. They're available all throughout Germany and they don't have roots in regional Cologne cusine anyway. Rügenfisch is actually situated on the island of Rügen! ;) The beer mustard was very interesting, never heard of it before. Thank you for teaching me about the regional cuisines of my home country. :D

Kolsch is top fermented like an ale but made to look like a lager. So it’s more malty than a lager as it’s brewed in same style as an English ale

The fish is from RügenFisch. Its a manufacture on the biggest island of Germany, called Rügen. And its far away from Cologne at the Baltic Sea.
