      Okay, I'm about to put you on some game. I was a cook for 10 plus years, and I worked a sushi and asian restuartant (two different places) for about a year each. The Wok is NO JOKE! That fire that he was cooking on is between 700-900 degrees. That towel is so he won't burn his hand. A wok is like if a cast iron skillet and a grill had a baby. Most dish takes no more than 3 mins to cook in a wok. Now depending on the meat it can be raw to fully cooked, going into that wok. Since he put it in at the end it's more than likely fully cooked. Raw or partly cooked meat are one of the first things but in the wok. By the way it looks it's could be just salt. Most restuartants like this don't carry MSG do to the scare. But GMO and MSG are NOT the same. MSG is not harmful, it is just another seasoning. I know you joking and I love your videos. But careful about jokes like that an average person don't the difference and it just not helping anyone out. But overall love your stuff. I would love to answer any other question you may have.

      That's one of them big momma face towels. The same towel she used for those old school hot combs. Towel always had burn marks on em. Smelling like burnt hair and cotton. 😂

    So the powder was a salt, white pepper, msg and sometimes they put sugar, that helps to balance out the flavors and salt levels. Also the liquid he used was seasoned oil. It's old they separate after they fly onions, scallion, chicken or peppers and use it to cook the fried rice

    I went to school with a kid, his family owned a Chinese restaurant, I learned a ton of cooking and stirring methods. Most food is prepped and ready to reheat and blend flavors. It's impressive the amount of food the restaurant could throw together and get it out the door into customer's hands in short time.

      My auntie is Chinese, and she said, fried rice is better when it is cooked a day earlier. I noticed when I tried to make fried rice with rice I cooked on the same day it doesnt taste as good due to consistency.

    A lot of the items he uses are already cooked, like pork, or already chopped and ready to go, like scallions. The rice is already cooked, too. So he’s heating up everything and bringing them together-but in such an expert and perfectly done way.

    You should watch more stir fried rice videos. It will take the mystery right out of wok cooking. Right wok, wok spatula, rice cooked the day before, advanced prepping ingredients, and gas stove.
    I have not bought Asian food in years after learning how. Best decision ever. Experiment with different ingredients, (make your own egg rolls and wontons) tempura, oyster, soy and hoisin sauce, sesame oil, spices, all give so much customization/variety and much less expensive than takeout or delivery. I stir fry so often that I now have four woks; cast iron, stainless steel, and carbon steel. Home cooking is the best.

He liked saving money and I liked knowing what was in my food. Leftovers are essential so you don't have to cook an entire meal every day. With all the RUclips videos home cooking is so much easier than all the cookbooks I bought before the internet.

      @@kreyolLA84 I always had lazy friends that wanted me to cook for them or do restaurant food into perpetuity. My husband was the only person I ever met that cooking a complete meal together was an adventure and we liked most of the same foods.
      I have been to people's house and knew right away what type of cook they were just looking at the spices. Only four bottles, including salt, pepper, and I gotta go home. I can't do that bland and boring culture.

    MSG is a salt made from glutamic acid. In cooking it works similarly to salt in that it stimulates salivation. MSG is more complex flavor enhancer in that by activating the glutamate receptors on your tongue, the brain then fires all kinds signals to the mouth, enhancing the flavor of whatever it is you're eating, minus the sodium content of sodium chloride. Personally, I think it makes everything taste like mushrooms. It works in chinese food but I like it when it stays in Chinese food. Regular salt on everything else, k thanks.

      There’s been so much controversy over the years about MSG. I remember years ago a lot of Chinese restaurants used to have “No MSG signs on the windows of their restaurants. Some folks think it’s unhealthy, while others think it’s ok to use. It’s actually in a lot of items in the stores and I’m sure a lot of restaurants use it. The seasoning accent, is that the same as MSG? I guess in moderation it’s “ok” idk to each it’s own ig

    I was trained by a Chinese family on wok cooking and did it in their restaurant. I was thinking how slow he was actually. This guy is straight chillin.     TO START WITH, THE RICE WAS COOKED A WHILE AGO, IT'S STEAMED RICE, COOKED IN A STEAMER, THAT'S WHY IT IS DONE SO QUICKLY, THE OIL IN THE PAN IS HOT, THEN THE EGG IS PUT IN FIRST, WITH HOT OIL AND scrambled eggs, it cooks fast too.....sorry caps and didn't feel like typing all that out again

    FYI - they come in earlier than the actual hours to open and do food prep & particularly precooking certain proteins ahead of time. This is a staple process utilized by most all Asian regions that are accustomed in preparing street food. They have adopted this along with techniques while in a restaurant setting in order to get the food to the customers very quickly.

      @@salgarcia3184He could’ve been being just humorous. However do you know everything there is to know about other cultures? I didn’t think so. The south doesn’t have much Asian or Hispanic people (outside of a couple of states for Hispanics with a good amount), so guess what? People will not know much about those people groups. Very common. Certain spots in the South, you will not find tortillas, or refried beans😂 or anything in SPANISH. It’s very different from the West, Texas and Fl.

    Yes it's a Chinese restaurant, but that's in Japan; here's how you can tell. 1. style of apron and the lettering on it. 2. the towel around the head is a Japanese style for workers that sweat. 3. his mannerism 4. the style of fried rice 5. Japanese being spoken in the background lol

    I've been cooking ever since I was little so it is a part of me. Now it's so all like downloaded in my mind 😂 if you're learning to cook asian dish, it's easy. Follow recipes and ask asian friends and watch youtube and follow along if you ever feel lost. It'll take practice but as we learn we grow and know. Then you'll have yourself a home made asian meal🍽 😋 love all these cooking videos. 💕

    I laugh so hard, I literally cried 🤣 I now finally realize how a foreigner feels when they see Chinese cooking for the first time 😂 A few things to point out: 1. This is not Chinese cooking, it's Japanese style Chinese cooking, very very similar, but with some Japanese twist e.g. the cloth wrapped around head is a Japanese thing. 2. I think the ingredients he added, in order, are: oil, eggs, rice, tare (salty broth), MSG and/or salt, sugar, more oil, pre-cooked shedded ham/meat, spring onions, pepper, soy sauce, rice wine or sesame oil 3. The cook has to make sure every ingredient is cut to the size of a grain of rice for consistent texture in mouth when eating 4. Every single grain of rice must be even coated by egg, that's why the cook flipped the wok repeatedly and cooked so fast on high heat 5. The cook must serve to the plate using a utensil (in this case, a ladle) because it's considered hygienic instead of pouring the food directly from the wok because food may drop to the floor.

    The key is prepping ingredients ahead of time and also that wok burner generates crazy amount of heat which cooks the ingredients really fast.
