My mom used to use mostly real potatoes for mashed potatoes but when she was stretching or used too much liquid, she would add in the dried potatoes. She also mashed rutabegas together with potatoes. Adding powdered potatoes to rutabegas would help absorb the watery texture of the rutabegas. She used it to thicken sauces or gravies, potatoes pancakes, and in meatloaf too. More ideas!

I have dehydrated potatoes in cubes, hash browns, mashed potatoes . I love using the dehydrated potatoes . I add them to soups, strews, rehydrate them to make mashed potatoes . Hash browns for has browns or to add to soups that you don’t want big chunks in . I did Blanche all the potatoes . I like to let my cut potatoes sit in a cool place for at least a couple hours or overnight in the frig. It helps take the starch out of the potatoes . ( They use to do this all the time years ago .) Any fresh mashed potatoes leftovers I dehydrate now . No leftovers to try to work into a meal. I was sick and my hubby did our sweet potatoes (1/2 buschel ) he chopped them into smaller squares but DIDNOT Blanche them . Surprisingly they turned out great- no black potatoes ! 1/2 buschel dehydrated made 1 gal jar full to the top . ( our sweet potatoes were much smaller than the store bought potatoes ) We use a vegetable chopper that has disks for the different shapes you might want. This makes the chopping go SO much faster . I highly recommend getting one. We got ours through Amazon but some store do carry them but the selection is very limited . ❤😊. I love dehydrating , it saves so much space and much lighter on your shelves than canned items. Another plus for dehydrating!! Remember canned items Carry a lot of weight wherever you store them.

My husband did suggest using his A/C vacuum pump and it works so great I am running out of space 🙂. Would venture to say I am addicted, it stays on my breakfast table and every time I open something in plastic, I grab a 'saved' jar and vacuum that baby. That was the selling point of the vacuum chamber, I have been saving jars for years never knowing why and now I know, your vacuum chamber does them all with the proper lid!! I would also like to commend you on your world events video. Well said and, speaking for myself, have had to stop myself from the mayhem. The focus on home and family will be a greater gain for ALL in the future. Thank you for keeping up the great work.
❤I’ve dehydrated potatoes in small pieces to jar up and use in different soups. Also make potato flakes for instant potatoes. I use 9x12 glass pans. I have a cabella large commercial dehydrator. The 9 x 12 glass pans fit in it just fine. ( I bought them from a thrift store for $2.00 Love all your videos , keep up the great work.. and it is a lot of work for you to make these videos
I have been trying to find out if I could use my PYREX glass dishes(oven safe) in my cabinet style dehydrator. I found zero information or thoughts about it until your comment! I could not fathom why I wouldn't be able to because they are meant for the oven & it is glass(so no transfer to food like I read metal & tinfoil can do).
Thank you for the video! I actually tried it, and my husband is a fan. Once I mashed the potatoes I added my spices of roasted garlic, onion powder, salt and pepper. Then put it in the dehydrator. I also used the vita mix before dehydrating and after. They were very smooth. I am considering adding powdered butter and powdered milk to the powdered potatoes so the process would be even quicker. All I would need to do is add water. Thanks again.
I like it. I dehydrated almost a five pound bag of russets. I boiled, peeled and mashed them. I then put them between two sheets of parchment and rolled them out with a rolling pin. I traced around the potatoes with a mesh tray from my dehydrator. The dried potatoes looked like a large tortilla chip. I broke them into pieces and stored them in a paper bag. The next day I put them in a blender because my blender is noisy. I added water at 4 to 1 and let it re hydrate for maybe an hour. It thickened nicely. I added salt and pepper and microwaved it for 2 minutes. Lastly, I mixed in butter and enjoyed.
I tried canning potatoes and used the dry canning method for the first time. I won't can them again, simply because of the space it takes for storage. Having canned potatoes on hand has its benefits. I like them for making a potato salad when I am in a hurry like happened just recently. No need to peel and cook the potatoes as those are ready to go.
I dehydrate my leftover dabs of white or sweet potatoes. Like you said, I learned quickly they don't work like instant potato flakes. I try to rehydrate them in the fridge for several hours, if I have time, checking and stirring them once in a while to see if I need more water. Then I heat them before serving.
I add a little white vinegar to the water when I blanch my potatoes for dehydrating. I’ve done slices and cubes but haven’t gotten around to mashed potatoes yet. I wonder if adding the powder to flour and spices for fried chicken, or to corn meal for fried fish would help making it crispy. Even maybe in an air fryer. Something I’ll keep in mind for when I make the mashed potatoes. 😊 Many Blessings!

My dried mash potatoes were thick and so hard. I was worried about dulling the blades on my blender so I grind mine in my grain mill. I have not used the potato powder yet but I am excited. Thanks for the informative video and loving the Lord!

Have not done anything with potatoes before other than making slices for scalloped, in the past and had to dip the blanched slices in vinegar mix to keep them from turning black in storage. I have my dehydrator with 4 trays now with potatoes like you show here and decided to do 2 trays carrots same way. Having gastroparesis, when I can't eat solid foods, this is going to help a great deal for nutrition, even if its adding a teaspoon of powdered veggies to broth.

Another useful tip for future reference. Thank you for the great video. I dehydrated some sliced potatoes when I first started to vacuum seal stuff, but didn't know about the blanching part. Beginner error, hopefully they will be okay when I go to use them, my plan was for use in soups.
I also add butter to my instant mash in a glass bowl after adding the boiling kettle water to it. Glass bowl is fine for a couple of people a pan for more people. I’m English and we always have this on our Sunday dinner every week and put any leftovers in the oven the next day to enjoy it all.
Thanks for this video! I've been wanting to do this. I did dehydrate some potatoes and blanched them but it wasn't enough and they are a bit off color. It still works in a stew or soup but they aren't very pretty. I'm from Washington State but am at least for now living up on the Arctic Circle in Norway. One popular food here to go along with meat is mashed potato mixed with Rutabaga's. You can buy them instant already mixed. I want to do my own. Traditional holiday dinners this mix is always served even if regular potatoes are served. It's also a great way to get the nutrition of a root vegetable.

I've canned all the farm potatoes. Yes, they do take up space, but we both like the convenience. In fact, DH had taken a pint to work, when he's working a long shift (along with pints of meat and whatever...). That being said, I bought some golden potatoes to can up, to fill out my supply. I think I'll dry up a batch of mashed, to try it out. It would certainly be convenient if I need a "dish quick!". Thanks, Heidi.
I actually just threw together a potato salad to take to a surprise birthday party that came up suddenly using some potatoes I had canned back in 2017 added my homemade mayonnaise, green tomato relish (also canned in 2017) plus some other goodies. Seems it was a hit! This is the number one reason I love having canned potatoes on hand for just such a purpose and I will certainly be canning up more in the near future :)
30# potatoes little over half filled a gallon jar. I find I liked the white potatoes over the russet. Whites come out fluffier when rehydrate and thr russet had the grainer/solid texture. They fry up great with left over rutabaga for the Englush dish 'Bubble and queek'.
It's great to know this can be done! I just bought 3 big boxes potato flakes. I don't use them much so I didnt have any. But then light bulb went off, I have mylar now! Duh! I can pop it in there and have them in case I can't find any fresh potatoes for Thanksgiving!

Great idea...to also dry pumpkin. My winter squash from garden usually keep very well, but I inevitably lose some to spoilage. Too will try and BAKE some today, blend afterwards and then put on drying trays for making fruit leather. Thanks for triggering that good idea..many blessings to you

I like to peel potatoes etc is to cook first, lose less potato that way. Glad I saw this video as I've been mulling whether my storage is adequate to keep potatoes. I'm keeping the largest, about 4 or 5 for next gardening season.
Great idea as I've just harvested 300kg of my own potatoes - BUT I live in an old farmhouse in a damp valley, so I'd be worried about getting all the moisture out. Plus I haven't got a dehydrator...
Consider dehydrating with your oven on cookie sheets set to the lowest heat and crack the door open to allow moisture to escape. We live in a pretty humid area and dehydrating is very rarely and issue

While all those would be fine, it may be best to leave out the cream until you rehydrate, then you can use cream and/or whole milk when you go to rehydrate

Great video, I had never thought of dehydrating mashed potatoes, I've always dehydrated slices (as used for scalloped potatoes). As you were talking about powdering the dehydrated potatoes with your blender, I started thinking that the grain mill would make sure you get an even consistency in the powder, in a shorter amount of time.
Did you notice a difference between the red and white potatoes? I am going to do this. I will have to try out the parchment paper. I love my potatoes. I swear I must have Irish in my background lol
I mixed them together so I cannot say but the next batch I do I am only using yellows simply because I read that red ones last longer in storage so I figure it makes sense to make the yellow ones more shelf stable
Been looking for another way of preserving potatoes. Mashed potatoes seems to quieten my stomach. I've canned them them but only use them in soups or fried potatoes.
Thanks for showing how to dehydrate things instead of using a freeze dryer. Several people I know have bought freeze dryers and love them, but besides the cost, they use more electricity in the long run, take up more space, and require certain set-ups that a lot of kitchens or pantries don't have. Plus, unless a persona has a large vegetable garden and orchard, etc., they seem unnecessary for urban/suburban/small homestead dwellers. You mentioned milk, Heidi. Can I dehydrate milk?
Yes, and I have as well as eggs, meat, cheese, broth. A couple years ago I came to the conclusion that buying a freeze dryer was a waste of money and set out on a quest to dehydrate even more things, especially those things I had never done before. One thing about dehydrated foods is that they take up much less room in storage than freeze dried.
If that is what you prefer and if you already have them and not a way to vacuum seal then sure, use that method, but know that one can buy a pretty inexpensive (about the same cost as a pack of oxygen absorbers) set up for vacuum sealing that can be used over and over again unlike oxygen absorbers that are useless after one use.
Is there somewhere that I can buy those silicone mats for drying....the brand of dehydrators are what you have, but those mats would fit onto my trays and I'd love to find some!
For the Cosori I have the green ones but also now have the brown ones that are less expensive and I find the brown ones just a bit better as they are a little thicker and deeper than the green: amzn.to/3olaFdT

So tonight we pulled out our bag of potatoes and yuk! We had to compost them. I said I just dehydrated a bunch! Weeellll, they came very gummy. Do you think the kind of potato used make a difference? They were a combination of red, yellow and russet. Or maybe the shape they were in when I cooked them. 🤷🏻♀️. I’ll keep trying! Any suggestions? The taste was good!

The original potatoes I dehydrated are the ones that turned gummy (I thing I just whipped them way to much) But I been doing more research and I found a couple of videos that suggests to heat 1 cup water, 1 1/2 +- of butter and a pinch of salt to boil, add 1/2 cup milk and a cup of the potato powder stir to combine. Pull it off the heat and let stand 10 mins. Then I should be able to fluff with a fork. 🤞🏼 I’m not gonna give up on them until I figure this out! 😀

Yes, it was a special request. I do not actually use it as a cutting board, he made me a chicken shaped one for that, this one is for rolling out dough for pies, turnovers, breads of various kinds and so on.
Yes, I have tasted it, I would not say it tastes like a Pringle chip as those have added ingredients to give them their distinct flavor, to me it just tastes like plain potato

I did this about 8 years ago and the result was not great! I dried the potatoes in my Nesco at 135, I dont recall how long it took but they got a tad tan and had a burnt taste to them. I made mashed potatoes and spread on the sheets. I did get them to powder but the taste was just off to me. What temp did you dry them at? You make me want to try this again! Thanks!
Is it normal to feel a slight numbness /tingly feeling in my hands after eating fermented foods? I love my fermented vegetables but I no longer eat fhem because of this problem Do you have an idea why is that happening?
Heidi I bought a Nesco a couple year's ago and have never used it. Looks like yours. It has a hole on top. Is there supposed to be an attachment with it to cover that hole? That's why I haven't used it. I'm concerned it won't dehydrate properly because of the hole. Thanks for the reply.
The only that that should cover the hole is the top of the dehydrator that should have the heating element and fan in it. That is where the power comes from unless you happen to have an old one with the heat and fan at the bottom

I thought about dehydrating my leftover mash potatoes from dinner, last week, I powdered them up in my bullet, but, because there was eggs and butter in them I put them in a freezer bag and tossed them in the freezer....I guess I really don't need to freeze then???

With the predicted potato shortage , this is a good idea! The dried or store bought type may not be available. So this is a good skill to learn.

I also add butter to my instant mash in a glass bowl after adding the boiling kettle water to it. Glass bowl is fine for a couple of people a pan for more people. I’m English and we always have this on our Sunday dinner every week and put any leftovers in the oven the next day to enjoy it all.

Thanks for this video! I've been wanting to do this. I did dehydrate some potatoes and blanched them but it wasn't enough and they are a bit off color. It still works in a stew or soup but they aren't very pretty. I'm from Washington State but am at least for now living up on the Arctic Circle in Norway. One popular food here to go along with meat is mashed potato mixed with Rutabaga's. You can buy them instant already mixed. I want to do my own. Traditional holiday dinners this mix is always served even if regular potatoes are served. It's also a great way to get the nutrition of a root vegetable.

I've canned all the farm potatoes. Yes, they do take up space, but we both like the convenience. In fact, DH had taken a pint to work, when he's working a long shift (along with pints of meat and whatever...).
That being said, I bought some golden potatoes to can up, to fill out my supply. I think I'll dry up a batch of mashed, to try it out. It would certainly be convenient if I need a "dish quick!".

I actually just threw together a potato salad to take to a surprise birthday party that came up suddenly using some potatoes I had canned back in 2017 added my homemade mayonnaise, green tomato relish (also canned in 2017) plus some other goodies. Seems it was a hit! This is the number one reason I love having canned potatoes on hand for just such a purpose and I will certainly be canning up more in the near future :)

30# potatoes little over half filled a gallon jar. I find I liked the white potatoes over the russet. Whites come out fluffier when rehydrate and thr russet had the grainer/solid texture. They fry up great with left over rutabaga for the Englush dish 'Bubble and queek'.
Bubbles and Squeak is the same thing as Colcannon. Different names from different countries

Great idea...to also dry pumpkin. My winter squash from garden usually keep very well, but I inevitably lose some to spoilage. Too will try and BAKE some today, blend afterwards and then put on drying trays for making fruit leather.

I like to peel potatoes etc is to cook first, lose less potato that way. Glad I saw this video as I've been mulling whether my storage is adequate to keep potatoes. I'm keeping the largest, about 4 or 5 for next gardening season.
We wash the potatoes really well, peel, blanch, and dehydrate. We then take the peelings and fry them up for supper or breakfast.

Great idea as I've just harvested 300kg of my own potatoes - BUT I live in an old farmhouse in a damp valley, so I'd be worried about getting all the moisture out. Plus I haven't got a dehydrator...
Consider dehydrating with your oven on cookie sheets set to the lowest heat and crack the door open to allow moisture to escape. We live in a pretty humid area and dehydrating is very rarely and issue

While all those would be fine, it may be best to leave out the cream until you rehydrate, then you can use cream and/or whole milk when you go to rehydrate

Great video, I had never thought of dehydrating mashed potatoes, I've always dehydrated slices (as used for scalloped potatoes).
As you were talking about powdering the dehydrated potatoes with your blender, I started thinking that the grain mill would make sure you get an even consistency in the powder, in a shorter amount of time.

I mixed them together so I cannot say but the next batch I do I am only using yellows simply because I read that red ones last longer in storage so I figure it makes sense to make the yellow ones more shelf stable
Been looking for another way of preserving potatoes. Mashed potatoes seems to quieten my stomach. I've canned them them but only use them in soups or fried potatoes.

Thanks for showing how to dehydrate things instead of using a freeze dryer. Several people I know have bought freeze dryers and love them, but besides the cost, they use more electricity in the long run, take up more space, and require certain set-ups that a lot of kitchens or pantries don't have. Plus, unless a persona has a large vegetable garden and orchard, etc., they seem unnecessary for urban/suburban/small homestead dwellers. You mentioned milk, Heidi. Can I dehydrate milk?
Yes, and I have as well as eggs, meat, cheese, broth. A couple years ago I came to the conclusion that buying a freeze dryer was a waste of money and set out on a quest to dehydrate even more things, especially those things I had never done before. One thing about dehydrated foods is that they take up much less room in storage than freeze dried.

Can I use oxygen eaters for vacuum sealing after the mashed potatoes are jarred as powder to the top of quart jar?
If that is what you prefer and if you already have them and not a way to vacuum seal then sure, use that method, but know that one can buy a pretty inexpensive (about the same cost as a pack of oxygen absorbers) set up for vacuum sealing that can be used over and over again unlike oxygen absorbers that are useless after one use.

So tonight we pulled out our bag of potatoes and yuk! We had to compost them. I said I just dehydrated a bunch! Weeellll, they came very gummy. Do you think the kind of potato used make a difference? They were a combination of red, yellow and russet. Or maybe the shape they were in when I cooked them. 🤷🏻♀️. I’ll keep trying! Any suggestions? The taste was good!

The original potatoes I dehydrated are the ones that turned gummy (I thing I just whipped them way to much) But I been doing more research and I found a couple of videos that suggests to heat 1 cup water, 1 1/2 +- of butter and a pinch of salt to boil, add 1/2 cup milk and a cup of the potato powder stir to combine. Pull it off the heat and let stand 10 mins. Then I should be able to fluff with a fork. 🤞🏼 I’m not gonna give up on them until I figure this out! 😀
Do you flip the partiallly dried potatoes over to dry them thoroughly?
You can though I have found it unnecessary since on the silicone they lift up making air pockets underneath

Yes, you can do the same with sweet potatoes and since I vacuum seal, I never use oxygen absorbers as there is no need.

I have never done it but from what I have seen from others is they should be cooked through but not cooked until fully soft

Yes, it was a special request. I do not actually use it as a cutting board, he made me a chicken shaped one for that, this one is for rolling out dough for pies, turnovers, breads of various kinds and so on.

Yes, I have tasted it, I would not say it tastes like a Pringle chip as those have added ingredients to give them their distinct flavor, to me it just tastes like plain potato
Can sweet potatoes be substituted with the same results as white potatoes?
Though I have never tried it I would assume so. Best way to find out is to give it a try with a small amount

That all depends on how warm it is there and what your humidity is
I did this about 8 years ago and the result was not great! I dried the potatoes in my Nesco at 135, I dont recall how long it took but they got a tad tan and had a burnt taste to them. I made mashed potatoes and spread on the sheets. I did get them to powder but the taste was just off to me. What temp did you dry them at? You make me want to try this again! Thanks!

Yes, this can be normal, while I like some fermented foods, I have to be careful to not consume too much as I am not very sensitive to the alcohol

Heidi I bought a Nesco a couple year's ago and have never used it. Looks like yours. It has a hole on top. Is there supposed to be an attachment with it to cover that hole? That's why I haven't used it. I'm concerned it won't dehydrate properly because of the hole. Thanks for the reply.
The only that that should cover the hole is the top of the dehydrator that should have the heating element and fan in it. That is where the power comes from unless you happen to have an old one with the heat and fan at the bottom
The hole allows for air circulation.

Works awesome, we thin pumpkin with water then dehydrate and powder. 1/4 c. powder to 3/4 c. water equals 1 cup pumpkin puree.

I thought about dehydrating my leftover mash potatoes from dinner, last week, I powdered them up in my bullet, but, because there was eggs and butter in them I put them in a freezer bag and tossed them in the freezer....I guess I really don't need to freeze then???
No, they did not need to be frozen if they were fully dried. I dehydrate eggs and keep them vacuum sealed in jars in my pantry
