In all seriousness though, I never comment on videos but this was so good I couldn’t help but to get on here and thank you! I made mine with venison back-strap. The sweetness combined with the other ingredients blew my mind.

I made three of your dishes this weekend, all for the first time. Beef Fajitas, Mexican, rice, and refried beans. All three of your recipes are absolutely phenomenal. Each of these was the best I have ever had even at any restaurant. I’ve never made any one of these three before. I will be making them a lot. I give you all the credit because you’re teaching and recipes are what did the trick. I can’t give you enough compliments. Thank you thank you thank you! I can’t wait to start trying some of your other recipes.

When buying the steak, if possible buy inside skirt as opposed to outside skirt. Inside is very tender and incredibly delicious on its own marinated and grilled. Outside skirt tastes just as wonderful but has the texture of shoe leather. I gave a piece to a dog once and she had to give up. To use it, you need to brine it for 1/2 hr before marinading it.

Theres a secret to tendering meat. Papaya. Thinly sliced pieces between each layer of meat. Don't go past 2 hours. If you dare leave it overnight, your skirt steak will turn into ground beef. You won't even be able to flip it.
