NO-CANNED TOMATO SAUCE MENUDO TAGALOG | PANG HANDAAN STYLE MENUDO!

- This is how MENUDONG TAGALOG is cooked, no canned tomato sauce, no instant tomato paste. Just real riped tomatoes! Pork liver can be also added to this recipe but I chose not to put liver. Menudo is traditionally served on special occasions only but is now included in our weekly menu plan. This is one of the menudo varieties that is super simple, quick to prepare, yet flavorful, the melts in your mouth type of menudo recipe. Try this recipe and I promise your family will love it as we do!
Here are the ingredients:
1 kilo pork kasim or pigue, cut into small chunks
1/4 cup soy sauce
5 pieces kalamansi
1 tsp ground black pepper
cooking oil for frying
2 pieces potatoes, diced
1 medium carrot, diced
3 pieces regular hotdog
1 piece bell pepper, diced
8 cloves garlic, minced
2 pieces big onions, chopped
6 pieces ripe tomatoes, chopped
1 small can liver spread, 85 grams
1/2 tbsp annatto powder dissolved in 1 cup of water
1 piece pork broth cube
2 pieces of bay leaves
1 tbsp brown sugar
add more pepper, adjust accordingly
NOTES:
📝Leave the pork meat for 1 hour or more
📝You may include pork liver in this recipe
📝You may add raisins if you like
📝To avoid over-salted food. Gradually adding the ingredients and seasoning it with a light hand is better than putting all at once.
📝 This dish serves 6-8 persons
📝 To each his own. This is my way of cooking and I hope you could respect it.
