MECHADONG BABOY WITHOUT TOMATO SAUCE | KINAMATISANG MECHADO (NO-CANNED TOMATO SAUCE)

- PORK MECHADO is one of the classic cuisine and a common favorite among many Filipino families. There are different variations of cooking this dish. Let me share with you the simplest version yet satisfyingly delicious. The melts in your mouth tenderness of the pork will make you ask for extra rice. I hope you can try this version and let me know in the comment section.
Ingredients:
3/4 kilo pork kasim or pigue
1/4 cup soy sauce
1 tsp ground black pepper
2 pieces potato
8 cloves garlic, minced
1 large onion, chopped
1 large bell pepper
6 pieces very riped tomatoes, chopped
1 tbsp tomato paste, optional only!
1 tsp annatto powder, diluted in 1 tbsp water
2 cups water
2 pieces bay leaf
1 piece pork broth cube
2 tbsp fish sauce, adjust accordingly
2 tbsp sugar
4 tbsp butter
IMPORTANT NOTES:
📝I added a bit of tomato paste just to add more vibrant to the dish. You can leave it out! It's optional only! Please read before you bash me!
📝FYI Fresh tomatoes and tomato sauce impart two very distinctive flavors to dishes. Crushed tomatoes are fresh, unseasoned, that needs a little bit of work to make it flavorful. While store-bought tomato sauce is already processed with a lot of herbs and spices. Please know the difference before you bash me! :)
📝To avoid over-salted food. Gradually adding the ingredients and season it with a light hand is better than putting all at once.
📝 This serves 6 to 8 persons
