Today I'm baking mochi muffin with Buttermilk Pantry's recipe. The original recipe is made with black sesame paste and I'm swapping with matcha powder and biscoff spread(failed). I hope you guys enjoy my video and please do not forget to subscribe to my channel and leave a comment down below! 🌈
Mochi Muffin
Ingredients:
30g unsalted butter (melted)
60g brown sugar
40g white sugar
1/4 tsp salt
1 large egg (room temperature)
180g tinned full fat coconut milk
1 tsp vanilla essence
8g matcha powder / 60g biscoff spread (?) / 30g black sesame paste
172g glutinous rice flour / mochiko flour
1tsp baking soda
black sesame seeds & white sesame seeds (optional)
Bake at 180°C with convection mode for 35-45mins // I baked mine for 35 mins
35 mins thinner crust
45 mins thicker crust
It is crunchy on the outside and soft and mochi-y on the inside. The shell softens over time due to its mochi nature so make sure to eat it fast or reheat it if it turns soft.

what can i use instead of the coconut milk?
According to buttermilkpantry, you can dilute coconut cream with some water, but the outcome may be a little bit different. Canned coconut milk will still be the best choice.
