Could you tell me more or less where in the movie DYRL the Elintseeker is shown?
Can you fold the vertical stabilizers down on the backpack like the other VF-1s??? I assume the radome would look weird if so...
Negative, the vertical stabilizers do not fold down.
You said Yamato only did 2 versions. However, I have a clear box Yamato VE-1 version. It's also 1/60 scale.
On 2 versions of the V2 toy. The clear box is a V1 toy which has no parts in common with this later effort.
What about the durability of the elbow joints?
I've never known a Yamato or Arcadia toy to have issues with elbows. There were shoulder joint issues in the first Yamato V2 toys, and they're still something you should strive to be gentle on, but no Elintseeker should come with broken ones or have them break with gentle usage.
