I remember joining a cooking competition back in college, the theme was WES-FIL fusion, i decided to go Filipino-carribean basically made a seafood type-filipino food with carribean flavors (wouldve used conch if it was available but sadly not.) so instead, i decided crab and shrimp (prepared similary to ceviche) filled Dynamite wrapped in lumpia wrapper, then wrapped in veggie Okoy served with sweet-Spiced vinegar along with a sweet oyster sauce based thick sauce. *(the veggie okoy wrap was a bitch to achieve btw)* as one of the judge/professors pass by my prep table, he scoffed at me and said: "Dynamite? how original" in a sarcastic way. kept my mouth shut and pissed me off in a good way that i focused even more on nailing the taste i wanted to achieve. after the dishes were served, i won *best in Appetizer* category. the comment from the judge was: "the dish showed the theme perfectly and the best part is the taste complimented the fusion. it seemed original Filipino, but new. in philippines, we have a version of ceviche called ensalada. though usually it uses shrimp paste or salted egg for flavor. sometimes we use raw mango to get the sour/tangy taste so little vinegar if not none is used. i thought since those were similar, it would be recognizable to Filipino palate. and as we usually use beef or pork as fillings, using seafood would be new. especially with the mix of crab and other ceviche ingregients. i recommend you try it, even without the veggie okoy layer. i just wated to add that to make the appearance more colorful and the dish presentable. i wish i had kept a photo of it to show, maybe when i recreate it, i'll take a photo.

On my meat fillings for the lumpia, dynamite or shanghai, I usually make it garlic forward to make the taste intense and add some pork cubes to make the taste deeper. When rolling the lumpia, make sure to tuck and compact the filling so it turns into logs and the wrapping tight. I also add a slice of cheese to the dynamite lumpia to take out any possible spiceyness. The stalk on the pepper makes it look like the fuse to a dynamite stick. My dip for the Dynamite sticks is plain mayo/ketchup mix. If you have a party and serve up lumpia those bad boys are the first to go and are gone in seconds.
Wow! Loved how you made not just 1 but 3 kinds of lumpia. You must also try doing lumpiang sariwa. It's basically lumpiang gulay but instead of deep frying it, you will eat it as fresh. Then partner it with peanut sauce. Also, lumpia is always in the menu for any/some occasions here in the philippines (birthday parties, company parties, christmas dinners, and others) partnered with pancit or filipino-style spaghetti.
for dynamite the typical sawsawan is ketchup/mayo mixture. Both dynamite and shanghai are also good pulutan. Lumpiang gulay can also be a nice snack. (by the way the lumpia you made is actually the lumpiang togue. Beansprout in filipino is togue. You can also make crab lumpias, chicken lumpia, fresh lumpia (lumpiang sariwa) which is not fried. oh, for dynamite you ca also stuff it with cheese, or instead of ground pork you can also use bacon bits, or ham.
after the salty, sour and crispy LUMPIANG Tauge, shanghai and dynamite .... partner it with sweet TURON (fried banana wrapped in lumpia wrapper ). it is a great combination experience with families and friends on simple party visit
side tip. normally the vegetable lumpia uses the vinigee sauce while the pork filling uses the sweet and sour. You can also try adding cheese to the dynamite filling. Sometimes replacing the pork with cheese or just adding cheese to the pork filling. Side comments, to much filling for the size of the wrapper, should be half the quantity you used. Lastly I know its laborious to make lumpia. Prepare the filling, chop the vegetables mix the filling, wrap the lumpia, fry it. What we normally do is we make a lot of these. Wrap them all at the same time, place them in a container and put them in the fridge. When you want to eat them, just bring out, get a few pieces, fry and enjoy. Since its in the freezer, it will last weeks. Last tip, when frying these, fry them until the wrapper starts to get golden, take them off the oil, place them in a rack, place the rack on top of a baking tray, shove them into an pre heated oven, 200-300 would be fine, wait until golden brown. the reason why you do this is because the oil is more viscous when hot. Excess oil will drip and you wont get that ikky oily feeling when you eat it. if you have a good air fryer that will work too but its not as big as an oven.

U know what this is the second time that I'm watching this vlog and also some. Since we Filipinos love dippy dippy hehheh vinegar is the top of that and for sure u will always have that in the future why don't u make ur own dippy dippy vinegar in a glass container it's easy for both of u and save time at least u can already a made one that u will grab anytime u want especially with lumpia and crispy pataaa hehehe..what we normally do is buy a bottle of plain vinegar then we made our own spicy one. We put a lots of red chillies then garlic also whole peppercorn and red onions.
You can add some sweet potato too on your veggie lumpia too. It adds sweetness into it, perfect combo with the your vinegar dippy. And you can also add cheese into your dynamite lumpia 😊

For those who's budgets are tight we normally put cheese or ham and cheese thats absolutely more delicious. Have u tried Chicken Curry? It's different from other Curry from different countries and I'm sure ure gonna love it. I suggest that u fry the potatoes and carrots and topped it on the Curry because normally they cooked it along with the chickens

Looks poppin. For sawsawan of lumpiang shanghai, most of us just mix banana ketchup and mayonaisse. Sort of like thousand island dressing. Your lumpia looks legit and poppin. Props for the awesome cooking and video.
The veggie rolls is perfect for vinegar while dynamite and shanghai is perfect for the sauce. But of course its your choice which one is better for the sauces. Cheers!
Make a cheesy dynamite next with ranch dressing. Add a mozzarella or provolone at the center of that dynamite then have a ranch dressing dip on the side... Wow heavenly 🤤
Your dynamite needs some cheese and mayo & ketchup dip. You can try fresh lumpia which is a break from all the deep frying. You can also try cheese sticks - cheap processed cheese bar (sometimes rolled over cheese powder) then wrapped and fried.
For Pilipinos... Cooking something in slow cook and hard process are food! The harder the process, the tasteful the food... Btw... Adding good stripe of cheese in the dynamite makes it more tastier! Enjoy!

long time no see, glad to see both of you back. an option i had with the dynamite one is adding cheese into the mix before stuffing it into the pepper. incidentally, peppers are called sili (in tagalog and visaya. except for the waray language, sili means something from the male anatomy =D) adding "ng" to the "sili" usually has another word following it to describe what kind of pepper it is. eg. siliNG labuyo translate to wild pepper, siliNG espada translate to sword peppers which is also known as the siliNG mahaba (long pepper)
please do try the improved dynamite. it has a cheese inside the siling haba together with the ground pork, im sure you'll love it more. more power and god bless!

long time no see, glad to see both of you back. an option i had with the dynamite one is adding cheese into the mix before stuffing it into the pepper.
incidentally, peppers are called sili (in tagalog and visaya. except for the waray language, sili means something from the male anatomy =D) adding "ng" to the "sili" usually has another word following it to describe what kind of pepper it is. eg. siliNG labuyo translate to wild pepper, siliNG espada translate to sword peppers which is also known as the siliNG mahaba (long pepper)
Ketchup+Mayo is a good dip for Dynamite~ Meat and cheese are good fillings for Dynamite~

Suggestion for a more authentic dynamite is to use slender sili with long peducle/stem. It will look like a real dynamite stick.

for me when i am making lumpiang dynamite i add cheese inside to offset the spiciness of Siling Haba while creating ketchup + mayo combo condiment
If possible, I hope you can also make lumpiang sariwa (fresh lumpia).. its different because its not deep fried.. Its contains veggies inside and mostly bamboo shoots covered with sweet savory sauce... I like fresh lumpia more than lumpiang gulay so i hope you also try making it.. ❤️
