How to Bake Sourdough on the BBQ Grill

In this video, Heather demonstrates how to bake a sourdough boule on the barbecue grill. You'll learn what temperature to aim for, what tools you'll need, and how to make sure your BBQ stays a steady temperature.
**How to Bake Sourdough on the BBQ Grill**
1. Mix, shape and proof dough as normal (see recipe links below).
2. Preheat BBQ with baking vessel inside on high heat, until temperature reaches 500°F (260°C), roughly 20-30 minutes. Use oven thermometer placed on BBQ grill for maximum accuracy.
3. Score dough and place into baking vessel. Replace lid, close BBQ, and reduce heat to low. Bake for 25-30 minutes, closely monitoring the temperature inside your BBQ. Anywhere from 400-450°F (205-232°C) is ideal.
4. Remove lid and place it underneath the bottom pan, creating an air-bubble insulator to prevent the bottom of the bread from getting scorched. Bake with lid off for 15-25 minutes, depending how dark you like your crust.
5. Voila, your bread is done! If baking more loaves, heat the BBQ back up to 500°F (260°C) before starting again.

It's 95% to 110% here in Tucson AZ so BBQ here I come. Oh Boy! Oh Boy! I do have a "little griddle" purchased on Amazon so I will use it to help stop direct heat from the burners then maybe a small pizza stone to disperse heat even further. Hope it works. You can also slide in a cold pizza stone to tame the bottom heat on cast iron.

Thank you… your video has perfect timing. We are also having a incredible heat wave just now and I’ll be baking my loaves tomorrow morning. I’ll try your method on the bbq and will let you know. I’m using a pot style Dutch oven and will be putting cornmeal or oats on the parchment paper before placing the bread on it. I’ll let you know

I have a loaf proofing, that I started last night. And, as luck has it, we noticed a plastic burning smell from the oven last night when I started to make dinner. Fried wire in the back that leads to the main burner. Yikes! I am going to try your bbq method with this loaf. Fingers crossed!
Update: it worked! It really worked! I ended up grilling it longer but it was full of dried cranberries so it was more dense. After taking the lid off, I placed an aluminum pie plate upside down on the pizza stone, to raise it up. No burning on the bottom :). Great tutorial! Thank you!

Thanks Heather-I baked a double batch last weekend in anticipation of the heat wave. I mentioned trying the BBQ to my husband but we didn’t want to chance it, so this will be great to try! Bar BQ is a method of cooking meat. You are baking your bread on a grill, specifically a gas grill. Here in Texas we cook many foods on a grill. When we make Bar BQ, we use a smoker. We also really enjoy your channel!

I actually used our Traeger grill to bake my bread yesterday before I even saw this! Great minds lol. A Traeger grill is pellet smoker grill and doubles as a fantastic outdoor oven.

@@leavenly8473 for baking bread I've found best crust results by making sure there is steam. If I'm baking a loaf I just place a large cake pan with a couple inches of water and then set the loaf pan directly in the water bath, if baking a batard or boule then I place a small loaf pan with water in the back or side
