Looks really easy and good. When mixing multiple ingredients that include eggs and dairy, I like to thoroughly mix the eggs, milk and spices in a separate container and then add this solution to the shredded potatoes. This helps insure a more evenly blend of spices. I use this same trick when making meatloaf. I will try the baked hash browns.

Hi, Andrea! Wow, those cheesy hash brown cups look amazing. I like that I can use ham instead. I really liked using smoked ham in my casseroles last year and earlier this year, so I would add those. My muffin tins are garbage so I used an 8" x 8" glass dish, baked at 350 for 37 minutes, turned out amazing !
