See, this is another thing I hated about Family Guy: they _would_ use another comedy show's conceit to try and get a laugh, when Seth McFarlane isn't funny enough to be on Dr Katz ever.
This an old comment but it was done this way because animation was expensive then and a lot of the shots were actually static (not moving) and squigglevision (the name of the effect) was made them appear to be dynamic.
To add on to the previous comment - due to the creators' lack of budget, squigglevision was the only way they were able to make the show a reality. As minimalistic as it is, I personally always found it to be very original and rather endearing.

I'm reminded of an old Spider-Man exchange with a villain. "Why are you doing this? With your technology and your brilliant mind you could solve all of the problems in the world!" "I don't want to solve all of the problems in the world. I want to turn people into dinosaurs!" I mean, yeah, with animation you can do things like have epic battles and gorgeous fantasy worlds, but some people don't want to see cartoons like that. Some people, as you can see in this comment section, want to see characters talk to each other like real people in a realistic setting. Plus, when you factor in the cost of designing sets and hiring crews, if Dr Katz had been the same show with live-action instead of animation it would have actually been more expensive, not less.
This is the stupidest take I've ever heard. The show was perfect as is, it has its own aesthetic that works for it and it's a funny as hell show. And it's chill af, something you could fall asleep watching. Adding fighting or excessive animation would ruin what made the show so good.
