Neal, you beat me to smoking on the griddle!! Fantastic information and video here….nicely done mate! Looking for more smoking/griddling recipes from you!
What could be better than experimenting and having fun with the results. Chicken takes on smoke fairly easily so might be the first thing folks would want to try, but your reactions to the pork make it sound like the best product to use.
good call on the chicken...i just forgot all bout using my seasoning "testing mode"...definitely caught me off guard how good it was...the smoke really came through as well..
Well I wouldn't expect anything else from you guys. That's an amazing griddle cook. I'm always amazed on how you take it to the next level. I'm learning so much from you guys. GREAT JOB!!!
While I won’t be selling my grills any time soon, it’s nice to know that I could also use the Halo as a smoker in a pinch. But, maybe even better, it can be used as an oven with the lid down which most griddles cannot. In the event of a power outage this is a bonus as it runs entirely on propane. Kudos on your originality and exploring all the different uses of a griddle. Your videos have become DON’T MISS EVENTS for me!
That was awesome Neil and Amy. Hammered that one over the fence, a grand slam !! My mouth was watering when you started cutting the meats. All of them were so well cooked just right. The Happy Dance proved the outcome . Stay safe and keep up the great work. OLD DAWG DREAMING , Fred.
Watched your video and decided to try it. There's just one little problem - I only have a 17" single burner Blackstone. So I had to improvise just a tad. I made a two section heat shield with a rack on top of it. Seared the ribs at high heat for a couple of minutes on each side and then transferred to the rack and turned to heat down to minimum. Had a smoke box next to the rack filled with hickory chips. Two and a half hours later and 195 degrees I had some really good ribs for dinner. The wife isn't real crazy about smoked anything, but loved these ribs. I used a dry rub to start with and then added some Baby Ray's Hickory BBQ sauce for the last 30 minutes. So, YES you can smoke on a Blackstone griddle!!!! Even a small one.
Used our smoker vessel that came with our grill .Used applewood chips smelled so good entire grill still smells 2 weeks and a nor-easter later. Tim Nj.
This is a super cool way to have fun with the griddle. I own a couple smokers, so I dont think I would ever use the griddle to smoke. However, this was fun to watch and I love the relationship you have with your better half. You guys just have fun! Love it.
Amazing Video Neal and Amy. Now that is some Mad Meat Science right there. Neal, you continue to raise the bar. Congratulations to Wendy and Joe for the wins. That spammer thing threw me for a loop. Its sad when you try to do something nice for the community, and someone has to try to ruin it. Neal that meat looked Fantastic, even when your hat looks crooked. LOL!
Watching your griddle smoke video. Really cool. super option. when is your comparison video traeger verses Halo coming out. appreciate all your words. also do you do baby backs on the griddle?
You know, I actually bought the Traeger because of your channel and we have loved it. Now I just have to figure out a top I can use that’s large enough to cover most of the griddle so I can smoke some stuff…
Neil, you and I must have the same type head! My hat lands on my head crooked eight out of 10 times that I wear a hat. I’ve always got my spouse trying to readjust and straighten up my hat. Not sure how it happens but glad to see that there’s someone else out there. It’s got a crooked head!😂
Been doing lite smoke on my griddle for years, I use a dome with the controllable exhaust vent and put chips in a chip box put a rack down put the meat on the rack cover it and let it go
@@TheFlatTopKing I don’t do it very often and only for a quick lite smoke on some a couple pieces of salmon or chicken breast, it is really so I don’t have to fire up the Weber or the smoker, not talking about a full cook lol
If you are referring to my seasoning video...yeah its to hot..just seasoned per manufacturer instructions...the griddle got hot...thats why I did not hide the truth...I never tired to hit lower temps that day...as you see in the videos since then I have adjusted and controlled the temps just like most griddle...
Congratulations 🎊 to both winners. That is genius to smoke meat on a flat top. Well Golly lol you just blew our minds😊 meat was juicy 😋 thanks for sharing 👍

Great vid. All meats looked delicious, especially the steak. Unable to find it in North Texas. You made Americanized pork char siu! Is there a pork chopped sandwich in the making?
Another trick from the Master. I have the Blackstone with the attached lid, but don't think I can smoke like that with the hood. You sure do expand the options for the griddle,
That lid like that is an absolute game changer. You were right with your previous comment/reply. I know the Blackstone isn't supposed to be used with that lid on but I'm curious how hot it would be with just one burner on low. Using it like a smoker with that lid is fantastic. I'm liking the Halo more and more with its versatility and design. Also, I have a seasoning similar to Shake That (Better Burger) and the salt, pepper, garlic and butter is excellent sprinkled on mashed potatoes.
I could not imagine much....We only used the burner for about 1 hour maybe 1 15min and only used one whole burner on low....very very responsible...total cook time was about 1.5 hours
Great video. Have done this in a pellet smoker that was malfunctioning, with sear on cast iron over charcoal and turned out really well. My griddle, a Grilla Grills Primate, is another option as it has a lid like your Halo. The Primate can use griddle or grill grates.
Another amazing video. Thank you. I ordered one of these over the weekend. It should be here Friday. I'm a newbie, so it may take me a while to master temperature control on it. You're skilled with the knife too and that leads to a Question: Do y'all have a recommendation for a decent knife set?
I do....i actually did a knife video because I am asked so much...it goes over why I like each knife and uses for them.. ruclips.net/video/wW_GX_jBVxQ/видео.html
Another reason to consider the Halo. I'm a big pellet smoke enthusiast. I checked out your shop but no "Smoke That" is listed. I'd like to add this to my seasonings as soon as it's available. Great video as always.
Hey Neil. A great thing that you can do with the cold smoke as well is to throw some cheeses on a rack with the smoker tube and close the lid for a few hours and they'll take on the flavor of the smoke. Also an easy way to turn a cheap piece of cheese into something that people want you to come back to their parties. 😁
I see they added a stainless liner to the lid. For me, I'd pack it with food-safe insulation material to trap even more heat. Best part is, if you don't want high temp but a lid, just prop it open a bit. All of the smoked and griddled meats look great and I'm sure they were all delicious!!
Have you considered doming that tenderloin and steaming it to a finished temp? Or a setup on a cookie sheet like you did for the smoke tube? I was thinking this may reduce the charring of those sugars?
Try some wood chips in the tube mixed 50/50 with your pellets next time for an even better smoke flavor IMO. Always enjoy your videos and the chemistry that you and your wife have doing them. Love your first two seasonings and can’t wait to try “Smoke That” once you’ve dialed it in. Go Gators! 😜 -Rob
Well when looking on Amazon we could not find the pit boss I used...they are other options available but we just left that options open...sorry about that....
I dont think they make em...are asking about my actual camp chef when I had one...that was a Blackstone lid....if you are asking about a lid that is like the one I just used in this video....not sure they make em...this was a halo unit...
And, gotta say, every one of those meats look incredible! Says the guy who just 2 hours ago wolfed down a lot of air fryer pork loin and is now made to be starving again. Great, Great stuff y'all.
So, why the cookie sheet + aluminum foil + rack + smoker tube. I understand the rack, tube and something to catch the ash. Why not just the aluminum or cookie sheet? By the way, I'm glad to see you "warming up" to the Halo brand. They're headquarters are near my hometown!
a few things...the sheet pan was to protect the actual griddle from hot spots from the tube while burning...the aluminum foil was to just catch the ash when it burns to protect the pan...
