the shimmer is always on the side of the map where the jungle is. It spawns just after the jungle, so just dig around there and you should find it

It's not that difficult to dodge mimics to begin with. just dash and fly and they shouldn't hit you.

There's also a longer and less resources needed
Spawn mimics and drown them in lava
Takes so long but it's way safer and much easier
