I tried Phantasm Thiol Powder...Here's how it went

  • I got my hands on some Phantasm Thiol powder and Star Party yeast. So I made a hazy NEIPA with them. I ended up making a split batch with some Voss Kveik to see if I could tell the difference.

    I’m going to agree with you Brian, I’ll wait till the winter months to try these new omega yeast strains. I luckily have a couple of London Fog packets that I can use for my next few hazys. Cheers

    Thanks for the video and all the related efforts. I love split batch experiments. In the past I have used cosmic punch for a hazy in split batch experiments and it was my favorite. I also used star party while making a West Coast IPA and it was fine. My next brew will be using cosmic punch and phantasm to see if I can up the aroma and taste on the hazy. My plan is to use phantasm in the fermenter within the first 24 hours. Your videos continue to en outage me to expand my brewing supplies and techniques. Thanks!

      Thanks! I’ve used Cosmic Punch before in a double hazy and that turned out good. Although I had to copitch US-05 to get the gravity down a bit at the end. Still turned out fine though. I’d like to try this one again with Cosmic punch, hope yours turns out great!!!

    All the "give it time to clean up sulphur off flavor" comments are making me think it would be perfect for blending for a brett sour and letting it sit.

    Hey Brian, I brewed two beers with Star Party and just like you they tasted horrendous. Had two kegs with other beer in the keezer. Decided I will dump them when I finish the other two and just clean my lines and keezer together. SURPRISE! After a month the phenollic beer became very drinkable, the baby fart smell you describe disappeared and everything balanced quite well. Do not throw it away, give it a chance to mature into a toddler fart!

    Great job! I'm working on a similar video, but the sulfur is mentioned on Omega's website. You have to treat it a lot like diacetyl by slowly raising the temperature during fermentation once it looks like it is getting close to the expected FG. The yeast will clean up the remaining diacetyl precursors, and the sulfur odor compounds, which took my previous Star party brews about 5 days total. (About 3 days to finally get to FG after the initial fermentation and 2 days to rest as I still had a few days of dry hopping to finish). Mine both came out great, but I didn't do the hop mashing like you did or the phantasm powder.

      @@ElementaryBrewingCo Great to hear as I was almost going to recommend heating it back up a little to see if that helped. My future house is a little over a month out from completion, so I've got to go crazy with a bunch of beers, but I'm thinking one needs to be a crazy Thiol brew, and the rest and the rest will be from whatever I can think to brew.

    Well done video! The surprise Pappa showing!!! If you put a pic of him in your thumbnail I am sure you would double your female audience percentage...well from 0.2% to 0.4%. I had sulfur in Voss beer that I fermented at room temp, under pressure, and tried to rush too fast. It eventually cleared up after venting the CO2 several times.

    Filter your beer with copper kitchen scrubbers, it will remove that gross sulphur smell if its not going away on its own

    You can get a copper scrubby, which is used in distilling, and pop that in your keg. It will bind with the sulfur. Then you can regenerate it with acid.

      I’ve heard that a s well! I ended up purging the keg a few times and most of the sulfur has gone away, good tip nonetheless!

    It's definitely the heat that ruined the yeast. I'd try it again with fresh, cool yeast. I've resurrected hot yeast before and just because it grew in the starter, doesn't mean it wasn't affected by the heat. I hate FedEx as as a business owner, no longer use them. They have let me down almost 95%.
    I've been thinking of trying the yeast but not the powder. Not sure I've seen many positive reviews of it so far.

      That’s why I primarily try to use dry yeast but I had it and figured I would give it a shot.

    Good Video! Thiols are a sulfur based compound, so in my experience, the thiolized yeast will throw off that character.. I've had it from the fermenter, but not in the final beer.. but I've been purging my fermenter headspace at the end to deal with the fermenter sulfur character. I've been treating the phantasm as a boost to existing whirlpool and dry hops, not a replacement. Thanks for sharing your experience!

      I did not get any detectable sulfur from Cosmic Punch when I used it. I did a split batch with Cosmic Punch and British V with 2 ounces of Cascade in the mash and lots of whirlpool and fry hops. I thought I Cosmic Punch was more aromatic but people that I gave both to to try weren't able to distinguish between the two.

    I've had that sulfur thing happen a couple times recently and it's almost impossible to get over. Baby farts just ain't good in a beer lol. I've tried waiting it out, using copper, purging with CO2 - but no matter what it just won't go away. Split batch FTW!

    I didn't get the sulfur smell when I used Star Party. I even used it on DME with a total of 2 oz of hops. Please let us know if find out it was the powder or the "questionable" yeast. Thanks for the video.

    I have a package of stargazer. Swollen as well. Ill try making a starter. Ive been planning on doing a smash type of beer with it.

    I think based on my research of Phantasm Powder you are supposed to add it at peak krausen with hops after about 24-48 hrs into fermentation as it is supposed to help in conversion of thiols in the hops. I have tried several IPA from commercial breweries that used Phantasm Powder and never really noticed the difference.

      That would be the next place I would try adding it. If I had more I would have done it in both places I think.

    I've had great success with Helio Gazer. I added the Phantasm powder at high krausen. My understanding is the Star Party is for more of a West Coast style. But my .02, I think even after the started the yeast was toast. But I could be wrong. I can't wait for my Cold IPA with Lunar Crush that should be kegged soon.

      The yeast might have been okay. The homebrew store I go to had a power outage months ago and had a few packs of Cosmic Punch that were swollen ("weaponized" in their words) and they just gave them out. Made a starter and it was okay, but did get some sulfur off of it too that seemed to just need an extra couple days to condition out

      I will probably try it again but use Cosmic Punch next time, and make sure is colder out so the yeast gets here and is not ruined.

    Knowing that Star Party is a thiolized version of the Chico strain I might have gone with US-05 as the control. Just to eliminate the flavor contribution from Voss. I also find Voss just dominates with that orange rind character.

      That would’ve been a great idea!! Voss has a very strong characteristic that is some what overpowering, would’ve been nice to just taste the other stuff and not the yeast!

      @@ElementaryBrewingCo yeah I’ve tried Loki, Lallemand Voss, and Sigmund Gjernes Voss and they have all overpowered everything else even when I fermented at 75F.

    I'd say the yeast got stressed in the puch in the heat and that's what causing the sulpher smell.

    Bummer! That's why I don't want to gamble with ordering liquid yeast online. I've stuck with whatever I can get at my lhbs.
    I have a 3 way split batch NEIPA that's almost done fermenting to test out some of those new Omega yeasts. Comparing Juice vs Cosmic Punch vs Helio Gazer. Fingers crossed they turn out.

    You could try dropping a penny in the glass of star party, as copper helps get rid of sulphur smell. But because the beer is already fermented and acidic, it might not be the best idea to try and "treat" the whole batch... copper isn't good for you :P

    Star Party was a sulfur bomb for me too. I was totally disappointed in the results with that yeast and wouldn't use it again. The idea that I would be able to detect any released thiols over the sulfur isn't very realistic.

    I miss out on all the great liquid yeasts out there. My LHBS only stocks White Labs. Been brewing for almost a decade have yet to try Imperial Yeast which people rave about. This is all because vendors use Fedex and I have the same unreliable experience every single time with Fedex shipments, no matter what item I buy and what priority I select. Stuck on the same status for days. So frustrating.

      Agreed! I’ve been pretty happy with the progress they’ve made on dry yeasts though, but the Imperial yeasts great though! Hope you can get your hands on some!

    No dryhop? Those yeasts (thiols releasing yeast)thrive with a dryhop.

      I actually did add dry hops, forgot to mention it in video. I added 2oz of lupomax citra to each batch at high Krausen. I wish I had more phantasm powder as well, I would’ve added more during the dry hop as well.

    That yeast you used from Omega is the thiolized Chico strain, not I wouldn't say it was the proper choice if the design was for a hazy ipa. Mainly for beers you want clear fermenting like IPAs and Pale Ales. As for thiolized yeast and how it interacts the hops you used in the whirlpool actually absorbs a lot of the thiols you released from the grain and mash hops. A lot of people switch to products like Icognito and cryo hops for that reason. Same with Dry Hopping, most will do it during active fermantation to not lose any thiols. The less vegetal matter the better basically. Hopefully you try again with either the Cosmic Punch or the Helio Gazer. Helio Gazer is cosmic punch on PEDs.

    Isn’t Star Party the thiolized Chico strain? If brewing a hazy, why not use Cosmic Punch? Either way, sounds like the yeast was doomed from shipping either way.

      I’m not quite sure? I think it has a slightly higher potential for releasing thinks than cosmic punch though. I’ve used Cosmic Punch also and preferred those results anyway. But yes I think it got overly stressed during shipping anyway which messes it up.

      I have not! I will say though that I won’t order liquid yeast from them in the summer because I’ve had too many issues with super hot yeast showing up here in Cali, but it’s coming from Minnesota so it’s understandable. As far as equipment, it’s all been good and any issues have been resolved quickly. I only really order from Northern Brewer or More Beer since they have a location in California and both have been great!

    From what i understand, thiols are sulfur analog alcohols. So my suggestion is: Brew a lager with this yeast and see weather the beer suits the yeast. I don't know why thiols would be desireable in beer, but if rotten eggs are the new trend in beer, why not, the worst thing that could happen is that you don't like it.
