Great information. I wonder why you don't do the background shot first since your camera and the background are in place, and then run your wires and do the food shot.
What I do is take the shot like you said at the beginning, then the setup shot and then I do the shot at the end just like the beginning shot. What I find 90% + of the time is the first shot is not good. Here is why: I moved the setup, no longer lines up I had to move the lighting for the shot, so light on the table and background has changed.
