I appreciate that you turn recipes that need special traditional cooking gadgets into something westerners can prepare with what we have. Thank you very much! ^^
Thank you for this recipe! I enjoyed making it and your recipes and videos are easy to follow for beginners like me! I have confidence in cooking Japanese food thanks to you!
Yakitori is my favorite Japanese food, and Tsukune is at the top of the list...well along with a few others :) This is so simple and easy to make and it is so good. Not as good as grilled over charcoal, but it so good for sure. Thanks for posting.
Oishii! I was very pleased how these turned out. I made my own ground chicken using chicken breasts and a ninja and used cornstarch (I can't find any katakariko/potatoes starch anywhere) and it still turned out delightful. Thanks for the video!
Greetings from Monterey, CA!! I love this recipe! Thank you for another Bento recipe!! My kids will be so excited to open their Bentos to see these! Love your website as well, so easy to navigate. Have a wonderful day ladies!
There's another variation of this where soybean husks from tofu making is mixed in with the chicken meat and then deep fried. I forgot what it's called but i loved it!
Hi, friends! I'm from Russia, Moscow. Your channal is great, I really like it! Let me give an advice - wet your hands with water, and then the minced chicken will not stick to your hands.
I made this recipe today with cornstarch instead of the Japanese potato starch. It was delicious. I experienced one problem, though. The meat mixture was extremely soft and sticky, so sticky that it was very hard to shape patties with my hands and the patties I finaly made stuck to the plate where I put them on before frying. Should I have added more cornstarch to the meat mixture? What did I do wrong?
In the recipe you say that Katakuriko Starch is the same or comparable to Potato Starch. It would be nice if you could include such things in the video as well.
Mirin is sweet rice wine. If you don't have it use 2 tsp sugar dissolved in 1/4 cup sake ratio, heat it till the sugar dissolves and some alcohol 'burn off" and cool.
I know it's a stupid question because it's not going to be Tsukune anymore but I just don't eat any kind of meat instead of fish & sea food. Therefore, is it possible to make Tsukune also with fish? Which one would you suggest? -Thank you very much!
that's a bit odd but what ever floats you're boat I guess :/ you'd just have to try it... I'd google how to make fish patties or something for ideas of what kinda on seafood to use and a meat substitute.
There is a Japanese dish called Tsumire (not Tsukune) that is made with fish, like fish balls. We don't have a recipe for it, but there are some recipes out there if you search for it.

Theresa Yadao mirin has alcohol so dont give it to them
Mika ritsu, alcohol evaporates while cooking, so it's safe for kids.
Tch, if only it was that easy to get drunk.

Can I substitute corn starch for the katakuriko?
yes
Yes, you can use corn starch instead of Katakuriko.
JapaneseCooking101 what is katakuriko made of? Is it tapioca or water chestnuts?
It's potato starch
www.gourmetsleuth.com/ingredients/detail/katakuriko
Your recipe doesn't mention starch amount for the chicken mix. Also, how much water for the sauce. Thanks ladies.
any substitute for mirin or can we just leave it out?
Sake

Sharon Yang chinese cooking wine, soju. If nothing else, vodka, soysauce and sugar works.

of course. you can finely mince white fish (pollock, bass, etc) or shrimp into almost like a paste.
squid will also work. you get the idea

yes
How did it turn out
@@whitekanyewestthebully1346 really well! I used this recipe and variations of it to feed my family of 6

people dont give mirin to any recipe for kids because it has some alcohol
Mika ritsu
