I live out in the middle of no-where in northern Canada and I used to live in Ottawa. There was a Thai restaurant that I used to go to at least once a week for this soup. It has been at least 15 years since I have had this soup and I miss it all of the time. I wouldn't even be able to get most of the ingredients here because I would love, LOVE to be able to make this. Anyone watching and making this, please enjoy a bowl for me!
Was the restaurant called SOM TUM? I always thought that place was the best Thai Restaurant ever! They had so many delicious dishes, the Tom Kha Gai was one of the best soups I've ever had. Unfortunately the restaurant is permanently closed
I used to work in a restaurant In Germany. When I get sick, our Chinese chef makes for me this soupe. It is one of the tasteful soups I ever had. I am doing this now !

Seonkyong, this is the video that got me hooked on your recipes. I practically tortured myself watching them, because at the time I had COVID-19 and couldn't smell or taste. When I first came across this I HAD to try and make it. After a full week of no smell or taste, I made it two weeks later and it was delicious! Thank you for introducing me to a plethora of new recipes!
Tom kha gai is my go-to soup when I’m sick. It’s so easy to make, especially since I keep prepped lemongrass and galangal ready in my freezer. Eaten with a healthy drizzle of chili oil, it’s guaranteed to clear my head and ease my cough. I’ve never put tomato in though, will give it a try!
@@sarahkang1610 I just wrap the lemongrass in cling wrap. I cut the galangal, lay it on a parchment covered tray in a single layer, freeze and then transfer to a plastic freezer bag. Same with the kefir lime leaves. I live 45 minutes from an Asian grocery so I can't get fresh ingredients often. Just take out what you need for a recipe and allow to thaw It's really quite nice!

Nice recipe. There is one key ingredient to make it authentic and add complexity. It is Namprik Pao or Chili Tamarind paste. It comes in a glass jar and is readily available in Thai and Asian markets. Two generous tablespoons and you have transported yourself to Bangkok. It is also the basis of Tom Yum Kung which is the traditional shrimp lemongrass soup but no coconut milk in that one.
This came out amazing!!! I did make substitutions where necessary but the flavor was AUTHENTIC!! used lemon leaves instead of lime, and ginger instead of the famed galangal (oooone day!!) And 1/2 tbsp of tomato paste since my roomie used our last tomato...and I wasn't going to leave my warm apt for a tomato....but this soup *chefs kiss* amazing!! 👏👏👏

thank you for advocating for galangal! it is NOT ginger, absolutely not. it's worth the time & effort to find it, and to pick up makrut lime leaves and lemongrass while you're at it.
Botanically speaking Galangal is a ginger, it’s just not the common ginger root that is so well known across the culinary world. There are so many Gingers used for their rhizomes or their seeds. Turmeric rhizome, various kinds of Cardamom seed pods, finger root, and several of the peacock gingers are used in cooking too, also blue and black ginger roots. Most are very regional as far as use goes but there are culinary ginger species in the American tropics, Asia, South Asia, and probably other places too. In the case of the rhizomes they are pretty hard to find fresh but I’ve seen Galangal in the frozen foods section at my local Asian Grocery store.
@@michaeldahms7006 okay, sure technically, botanically it is, but so is cardamom. however, galangal is also different than common ginger when used in cooking. that was my point. powdered galangal is actually easy to find, though it lacks the punch of fresh (of course). sometimes it's called shajiang, or sand ginger, or cutcherry powder.
I love tom kha gai so much but yours looks so much better and heartier than any I've seen at the restaurants. I am definitely making this. One of my favorite soups ever!
Tom Kha Gai is my VERY FAVORITE food in the world- if it's done right. Your recipe looks like it would suit me very well. I live in Chicago and there are a lot of Thai restaurants here and most of them make Tom Ka too sweet for my taste. Also, for me the tomatoes are optional. And you have to use **GOOD** fish sauce, and good chicken stock. Sometimes I like tom kha medium spicy, sometimes I like it hot. I always like more lime juice.
this is what I nearly ALWAYS order when I go out for Thai. I enjoy it to have a ton of broth in the bowl, and I spoon copious amounts of Jasmine rice into it as I go along :3 Makes me SO happy. Especially with thai chili garlic sauce to go with
FYI, if you live in North America, visit your local asian grocery and look for the frozen lemongrass from Thailand. Absolutely better than anything grown in North America. Also, instead of using chicken breast, braise chicken thighs for 45 minutes at a low simmer then follow the rest of the recipe. Don't boil - meat will get tough.
I also made a little steeped tea for myself with the removed lime leaves’ stalks!! So so yummy and calming for me while I cook and enjoy the delicious meal!! Ended up having a little for lunch and a nice portion for dinner! So so good 🥰❤️😘
OMG JUST MADE THIS (with some substitutions READ AHEAD!) TURNED OUT GREAT!!! Instead of chicken I used sliced turkey, instead of lemon grass and lime leaves, I used mustard and mayonnaise, instead of soup broth, I used slices of white bread, instead of thai chilis i used provolone cheese, instead of the shallots I used lettuce, but i did have tomato! (phew 😅). I just put all the fresh ingredients in between the slices of white bread, and i substituted the rice for some lays potato chips. It still tasted SUPER AUTHENTIC tho.

I'm in Washington and can't get fresh lemongrass or galangal but my Thom Lha tastes just like the Thai restaurant we used to go to. Some places in America we just can't get those things!!! We HAVE to make due.

Just tried your recipe! 🤤 I used 5 small Thai chili's. I'll use 2 limes instead of 3 next time. The Kaffir leaves and lemon grass really came thru 👌 Maybe I'll use some coconut cream as well next time

Thank you, this is such a comforting soup. If you want another layer of flavour, add a tablespoon of Thai red curry paste or Tom yum paste. Most asian marts would sell it in a bottle or foil sachets
A Thai unprofessional chef here! In Thailand we do not put scallions and tomatoes in tom kha gai. It is considered a crime!!! Lol Wait for the soup with the herbs and spices to boil before adding chicken. When the chicken is roughly halfway cooked, then you can add the mushrooms. Lemongrass leaves should be added at the end before you squeeze the limes. These are small tips and tricks, but all have a logical reason, and I'm not telling why!

Agree.....alternative name is BLUE GINGER. We called it lengkuas here. Very important root spice in SE Asian cusines.
Did she say that galangal would cut you when raw? If so I’m assuming it cooks down? Thanks.

I tried yesterday taste good even without lime leaves just juice.
The lime leaves will take the soup to 11! If you have the opportunity, buy them frozen from an Asian supermarket and they will stay good forever

Thank you, this is such a comforting soup. If you want another layer of flavour, add a tablespoon of Thai red curry paste or Tom yum paste. Most asian marts would sell it in a bottle or foil sachets

In Thailand we do not put scallions and tomatoes in tom kha gai. It is considered a crime!!! Lol
Wait for the soup with the herbs and spices to boil before adding chicken.
When the chicken is roughly halfway cooked, then you can add the mushrooms. Lemongrass leaves should be added at the end before you squeeze the limes.
These are small tips and tricks, but all have a logical reason, and I'm not telling why!
