    Namaste, Today I'm gonna share with you a super simple recipe for a quick snack. No fancy stuff, just the basics. And to make it even better, I'll also share a bomb chutney recipe. So let's not waste any more time and get cooking!
    First, grab a pan and throw in two tablespoons of sesame seeds. I'm using white sesame seeds, but you can use whatever you've got. Give them a light roast, just enough to get a bit of moisture out. It should take around a minute and a half.
    The roasted ingredients have reached the right stage. Now, we will turn off the gas and transfer the oil to a mixer jar. Along with the oil, we will add one tablespoon of roasted peanuts. Here, I have roasted the peanuts well and removed their skins. Removing the skins will give the chutney a beautiful color. Additionally, we will add one tablespoon of fresh yogurt. I have also added one green chili pepper, some coriander leaves, and a little water, about 1/4 cup. And with this, we'll add salt according to taste and cover it with a lid and grind it so that this chutney becomes ready. The chutney is quite thick, so we'll add a little water to make it slightly thinner. But you can adjust the thickness according to your taste.
    Now we'll heat a tadka pan on the gas and add about a teaspoon of oil. As soon as the oil gets hot, we'll add three-fourth teaspoon of cumin seeds and one-fourth teaspoon of mustard seeds. Then we'll turn off the gas. After that, we added some red chili along with a little bit of sweet neem. We'll mix them well to make our chutney. Once it's ready, you'll see how quick and easy it is. This tangy chutney tastes amazing with idli, dosa, or rice. Let's keep it aside for now.
    After that, I have taken a cup of rice here. I soaked the rice in water for two hours so that it becomes nice and soft. As you can see, the rice is now easily breakable.Once the rice is soaked thoroughly, we will drain out all the excess water from the rice and transfer it to a mixer jar. Along with the rice, we will add half a cup of yogurt. So, for one cup of rice, we are using half a cup of yogurt. Don't add more yogurt than this, or the batter might become too thin. And make sure there's no water left in the rice, or that too can make the batter thin. As you can see, we have prepared this thick batter using this method. For today's breakfast, we don't want the batter to be too thin. Next, we will add one medium-sized finely chopped onions along with two green chilies, and we'll add a lot of coriander in it. So, for today's snack, we don't need a lot of ingredients or spices. Look, we've mixed everything well here, but if you want, you can add more vegetables of your choice.
    Let's put it on the gas, heat the tadka pan, and add a little oil in it. Along with that, we'll add a pinch of asafoetida, a quarter teaspoon of cumin seeds, a quarter teaspoon of mustard seeds, and then here, We'll throw in a spoonful of black lentils and turn off the gas so that our tempering doesn't burn. After that, we're adding a little bit of sweet neem to it, which will enhance the taste of the snack a lot. But if you don't have it available, you can skip it and we'll put this hot tempering into the mixture. After adding the tempering, finally, we'll put in a medium-sized mashed raw potato that was soaked in water to prevent it from turning black. You can crush it well and mix it, otherwise, the snack might become soggy along with it.
    Now, we're adding some salt and a little bit of chili flakes according to taste. Remember, only add the salt when you start making the snack, don't put it in the batter beforehand or it will make the batter too thin. Now, we've mixed all the ingredients well here, so it's time to make the snack fluffy and crispy. For that, we're adding one-fourth teaspoon of baking soda here. Instead of baking soda, you can also add half a teaspoon of eno if you prefer. After adding the baking soda, mix the batter well.
    If it starts blooming, let's not waste any more time and get started on making breakfast quickly.
    We'll put a tadka pan on the gas stove again. We'll put in about half a teaspoon of oil, but you can use less if you prefer. And with that, we're adding a little bit of sesame. Breakfast looks better with sesame. Right after adding sesame, we'll pour in approximately two tablespoons of this mixture. We'll keep the gas flame very low, meaning we won't heat the pan too much.
    If the pan gets too hot, breakfast can burn, so here you can see that the gas flame is very low and we didn't keep the oil too hot either, so after adding the batter, we'll cover it and leave it for about one and a half minutes, and see how nicely it has bloomed in one and a half minutes. So now at this stage, we flip it and you can see how nice its color has turned out, meaning it has cooked well from all sides. So we will also cook it on the other side in the same way, but this time we won't cover it, just flip it with a spatula.
    Alright, we'll press it lightly. You can add a little oil if you want. If you prefer, I'm adding about two to four drops of oil here, and then we've cooked it for about one and a half minutes. Look, it's cooked really well on both sides, meaning our fried idli has turned out really good and is ready. Let's take it out now. I'm making this snack in a tadka pan, but you can also make it in a kadhai if you want. It will just be slightly bigger in size, but it will still be tasty to eat. And if you want, you can make it without sesame seeds too t will still be so crispy and tasty. If you love eating idli and pakoras and want to eat them together, then definitely try this recipe once and see, both flavours will come together at the same time.
