I will certainly visit your hotel on my next visit hopefully in a couple of months time.We pay £5.00 (Rs. 500) for a masala dosa or 2 idlies and one vada with horrible chutney and sambar! Arun sir, One doubt, while preparing idli dough, mixing salt is not shown. Whether they have added salt mixed with dry yeast for instant fermentation. There is nothing wrong with using yeast, which is very commonly used in bakery products.
The cook has told, In 2 hours, the batter will be fermented, which is highly impossible without adding cooking soda or baking soda or Eno salt. The matter of adding salt does not arise because it is done in the morning and after 2 hours used.

It can't ferment within 2 hours. Also look between 14:06 to 14:10. The idly will have hundreds of holes which can be achieved only by adding soda.
