The roots you saw being dried is Cassava, which after drying it can be ground to flour for porridge or ugali. It's highly nutritious cab. Substitute to maize.

The root you saw drying is Kassava (or Mandioca here in Mozambique). You dry it to make flour or you can boil it. I think you hate it in a previous episode when you were riding with the guys and there was a lot of different dishes. Beautiful scenery. Thanks for the movies

Those tubers or roots are cassava like the ones you ate in Uganda. These are being dried to be grinded into flour to create ugali, (mashed potatoes) the bread like hot meal.
Such a clean country...and beautiful asphalt roads in Rwanda...........a lot better than what is waiting for you in Tanzania...and beware of speedtraps..

YUCA root...boil it for like 20 minutes and just eat it...very sweet like yams or taro...or roasted on an open fire for little more than 20 minutes until done soft to the touch...
Just how much space do you allot to tiny stuffed animals? Is there a chase vehicle full of them that you keep just out of frame? Love that you have stuff to give to the kids you meet. Very generous and helps keep your brief visits in their minds just a little longer. :D
