- This is an easy way to make canele just by mixing.
The trick is not to mix the flour and milk together neatly!
Please try to taste the freshly baked and fragrant canele.

■Ingredients ( for 6 canele molds)
20 g unsalted butter
250 ml milk
1/2 vanilla bean
70 g cane sugar
40 g bread flour
10 g cake flour
1 whole egg
1 tbsp rum
10 g unsalted butter (for canele mold)
1. Make the browned butter with unsalted butter, add milk and vanilla bean, and warm it up to 60℃.
2. Mix cane sugar, flour, and cake flour.
3. Add rum to the whole egg mixture and beat well.
Add ① and ③ to ② and mix roughly. Strain the canele dough and refrigerate for half a day to a day.
5. Heat the canele dough in a water bath at 60℃ until the butter is melted.
6. Brush the canele mold with unsalted butter. Pour in the batter and bake in a preheated oven at 210℃ for 1 hour.

Wrapping the canele will soften the crust.
The recipe is a success, the caneles came out perfectly! Thank you. I used all plain flour because I had no cake flour. Next time I will try adding bread flour because it is not as chewy as I had hoped. The batter came to be ~60g per cake 😂, probably because I boiled off too much milk. Since it is smaller, I baked it for 45 mins in a fan oven.

有塩バターなら塩バニラっぽくなりそうですね!でも型に塗るバターは無塩のほうがくどくなくて美味しく出来そうです。
私もよく失敗してたんですがchefmadeの型が使いやすくておすすめです!

Can you explain what you mean by dry? The outside? Or the batter? (I too am always shocked by how many baked goods in Japan are sold as authentic. I live here, but also did a short study abroad in France. Samoëns)
