    Ragtag Candy
    4 cups rice krispies
    2 cups lightly salted peanuts
    3 cups pretzel sticks broken into pieces
    24 to 32 ounces of white chocolate
    Melt chocolate in microwave or double boiler. until smooth. If using microwave stir every 30 seconds for up to 3 minutes. Add rice krispies, peanuts, and pretzel pieces into a large bowl. Pour melted chocolate over cereal mixture and stir until everything is well coated. Drop a spoonful of mixture onto parchment paper and let set until chocolate has hardened.
    Hard Rock Candy
    2 cups sugar
    1 cup water
    1/2 cup corn syrup
    1 fl dram / .125 fl oz. flavor oil
    food coloring
    1/2 cup powdered sugar
    In a large sauce pot combine sugar, water, and corn syrup. Bring to a boil and let boil until mixture reaches 310 degrees on a candy thermometer, the hard crack stage. Immediately turn off the heat and add flavor oil and food coloring. Pour onto a piece of aluminum foil lightly sprayed with
    non-stick spray. After 5 minutes use a pizza cutter or knife to score candy which makes it easier to break apart. After candy has completely cooled sprinkle with powdered sugar and break into pieces.
    Pecan Turtles
    12 oz bag of milk chocolate chips
    12 oz bag of dark chocolate chips
    12 oz bag of white chocolate chips
    2 cups chopped pecans
    32 rolos
    Pour all three bags of chocolate chips into a slow cooker along with the chopped pecans. Cover and cook on low for 1 1/2 hours or until chocolate has completely melted. Unwrap rolos and place on parchment paper leave space between them. After chocolate has melted stir until thoroughly mixed and drop a spoonful of mixture over rolo. Allow to set until chocolate has hardened.
    Peanut Butter Ritz Crackers dipped in Chocolate
    Melt any kind of chocolate you want in a double boiler. I have used white, dark, and milk chocolate. Spread peanut butter on cracker and sandwich together. Dip in the chocolate and top with Christmas sprinkles.
    English Toffee
    2 cups toasted and chopped almonds
    2 cups butter
    2 cups sugar
    2 Tbsp corn syrup
    6 Tbsp water
    1 bag semi sweet chocolate chips
    Finely chopped almonds and spread onto a jelly roll pan and bake them for 15 minutes in a 350 degree oven, stirring every 5 minutes. Reserve 1/2 cup for topping.
    Line another pan with aluminum foil that has been lightly greased. Sprinkle the rest of the toasted almonds evenly on the foil.
    In a heavy saucepan combine butter, sugar, corn syrup, and water. Cook over med. - low heat, stirring constantly until butter has melted and sugar has dissolved. Continue to cook and stir until mixture turns the color of a brown grocery bag. This will take 15 to 20 minutes. You can also use the ice method: place a small bowl of ice water next to the pot, when you think the candy is ready drizzle a small amount into the water to cool. When done it should easily crack and crunch in your mouth, not sticking to your teeth.
    When candy is done, pour carefully over the almonds that are spread out on the foil. Let stand for 5 minutes then sprinkle chocolate chips over top of warm toffee. When chocolate has melted, spread evenly over toffee, then top with 1/2 cup of remaining almonds. Break into pieces after completely cooled.
    Caramel Puff Corn
    2 bags Butter Puff Corn
    1 cup butter
    1 1/4 cups light brown sugar
    2/3 cup corn syrup
    1 tsp baking soda
    Preheat oven to 250 degrees. Combine sugar, butter, and syrup in a large saucepan. Cook over medium heat until mixture is at a full boil. Remove from heat and add baking soda. Stir as mixture will foam. Coat a large roasting pan or baking tray with cooking spray. Add puffed corn, pour mixture to coat. Place in oven for 45 minutes, stirring every 15 minutes. Remove from oven, let cool on parchment paper and break apart.
