    Did anyone notice Chef Jean-Paul used his FINGERS to determine the temperature of the Orange Ginger Bavarian Cream??? No thermometer AT ALL!!! Just dipping his fingers in the 185 degree Celsius and saying "There we are. Now we need to cool the mixture" (en France)??? WOW!! WOW!! WOW!!
    Great video and fantastic recipe!! Thank the Lord for captions in English! :-)
    I couldn't find the recipe either :-(

      That’s years of experience coupled with being a MOF. I think the recipe is for pro subscribers so not open to the general public.

      @@CaptainC0rrupt Hi and thanks for your reply. That "simple" act of using one's (presumed calloused) finger tips to check a 185 C temperature, really embodies what it means to be a culinary legend.
      And it is a reality check for all of us home bakers who dream about what it takes to get at that level (like being a MOF).

      @@CaptainC0rrupt Yup, mental/typo error.. I meant 185F but incorrectly note the wrong temp scale in all my comments. 85C is eq to 185 F and my fingers switched them on me ;-)
