SIOPAO BOLA BOLA RECIPE
for the siopao dough
250ml (1 cup) warm water
3 Tbsp sugar
1 1/2 tsp active dried yeast,
400g all-purpose flour
2 Tbsp oil
1 1/2 tsp baking powder,
for the bola bola filling
2 salted eggs,
1 chinese sausage,
1 Tbsp green onion,
350 g ground pork
1/4 cup shrimp, peeled and chopped,
1 Tbsp oyster sauce,
1 Tbsp sesame oil,
1 Tbsp water,
1/2 tsp salt,
1/2 tsp ground pepper,
1 Tbsp cornstarch.
Instructions:
For the dough
dissolve sugar into warm water and mix in dried active yeast and set aside until foamy.
Add the mixture into the flour, combine and knead for 15-20 minutes.
Set the dough ball aside, covered until double in size about 1 1/2 to 2 hours
when you are ready to use the dough, punch down the dough
add baking powder and gather up the edges to enclose the baking powder.
-lightly knead the dough for several minutes to evenly incorporate the baking powder, which will activate immediately.
For the filling
-combine all the ingredients listed into a bowl. Mix until well combined.
Making the bun
⁃ Form the ball of dough into a roll, cut into two, then cut each half into 6 (this recipe makes 12 large buns)
⁃ Roll each piece of dough into a ball, press down with your palm and roll with a rolling pin into thinner circles.
⁃ Take a round spoonful of filling add salted egg and sausage and place in the center of each circle , holding and turning with one hand and pinching with the other
⁃ Place buns into the (bamboo) steamer rest for 25 mins,
Steam:
-start with cold water on high fire
-when you see steam comes out, set on medium fire for 15 minutes,
leave the lid on for 5 minutes , after turning off fire.

The pork will be cooked. Don't worry, fine or ground meat cooks faster.

Hi Melvin,
The filling turned out perfect. Chopped pork gives a better texture than ground pork. It is not as packed and therefore not hard. The taste and aroma is delightful. The dough is very acceptable although not great. Also, i was hoping for a whiter dough. Overall, this is a very nice recipe. Thank you for sharing.

Sir I tried adding the baking powder just like you did pero medyo naging rubbery ang texture but ang itsura is nice. What do you think caused it to be rubbery
Try again, it can be many reasons. I would make notes as I go every step, specially the texture( you can make adjustment on amount of water). thank you for watching and enjoy making home made siopao.

that is my secret to soft and white dough , the second stage in making the dough .add it to before making the siopao, thanks for asking.

I tried making bola bola siopao with raw ground pork. Hindi siya naluto. Talaga bang hindi niluluto ang ground pork kahit konti bago isama sa ibang ingredients?

Baking powder is also a leavening but you can do away with it and use yeast only
How many minutes the kneading time ?
15 to 25 minutes by hand , until you can do windowpane test. your dough springs back and forms into a smooth ball. around 8 minutes with mixer dough hook on number 2 speed

Any steamer will do. Some wrap the lid of the metal steamer with cheesecloth or leave a small opening.Bamboo steamer keeps the buns from being soggy, thank you for watching 👍

Hi Sir, I live here in Seattle and we have cold weather most of the time. My sister made the dough for siopao when she was here. She uses the same recipe when she makes it in the Philippines, but the results are not the same. The one she makes in the Philippines is better than over here. Is it because of the weather? Thanks!

Yeast works best at 28c. If the weather is too cold, the yeast will not work
How long to steam since the bola bola was mixed raw

Does it affect the way the dough would rise in the steamer? I plan to make the dough in my bread machine and was hoping to go mostly hands free with the kneading. Thanks and I love your videos, btw.

I tried the dough today Melvin. After many tries from different recipes, yours is very good! I adjusted the liquid and do the window pane test aside from measuring by scale. There are actually many brands of all purpose flour available here in Manila. I tested most but I found out that the all purpose flour to use in making buns should be in 00 or 11 % protein. I bought the Swan all purpose flour here and tried half of the ingredients you shared just to see how the buns go. The liquid ratio needed a little bit adding a tbsp or 2 tbsp during the 1st proof. It puffed nice and steamed very good outcome. (without the fillings for now). I just like to ask how can I make the buns not shiny after the steam. I like to get the appearance like those buns in China. It's flat and not shiny. Any idea? It's very interesting though and coming up with a very good bun is the base of making a home made and even for commercial consumption. I found yours better and very clean video for us to understand. Except the detailing of instructions for others who are mostly beginners. I would be keeping your video for my reference and improve my siopao coming from your techniques and recipe guide. I agree, you can make adjustment depending on the flour available. the result vary also like flat not glossy. I just do small batch for home cooking no special flour or conditioner like commercial so results are not as good. thank very much for the support and keep on watching.
Leave the dough uncovered when proofing. The surface will dry up and it will be flat like those in China.

after kneading I will rest the dough for one and half hour or double in size depending on the temp of your room. thank you for watching.
Please don't use grams, convert to ml or cups. Have a hard time converting grams to cups or ml. Different convertions. 768 ml, 500 ml. Confused what is right.

Gram is more accurate. If you want to be a serious cook, invest in a scale. But you can use any amount of dough and just adjust the water. It should not be too runny. For example, you can start with 1 cup warm water and 1 tsp of yeast. If you want to use 2 cups of flour, just slowly add yeast water. You may not use all of it. The consistency of your dough should be similar to Melvin's.
U should change ur chopping boards to avoid cross contamination

Don't worry about it. Once you cook the siopao, the bacteria will die. I'm sure he cleaned the kitchen while he steamed the siopao.

there should be with shrimp siopao written in your display if you are going to sell it as other has extreme allergy with shrimp usually shrimp are added in siomai only not in siopao ,be cautious
