I didn't see any comment explaining it but you did overlook a detail that was revealed in this anime. The Left Hand of the Soul King is of advancements and the Right Hand of the Soul king is of stillness. Meaning Mimihagi only stopped the disease but didn't remove it from Ukitake so as he was growing up he still had to struggle with it.
Aizens such a chad. They take like 2 seals off him and he still has aura. Man that Ukitake reveal was so epic when I was in school.

After the Soul King got turned into a blow up doll his chopped body parts got scattered. Yep youre right, Mimihagi is the right arm of the SK. So far there are 4 body parts of the SK known: Gremmy has the brain (heavily implied in the novels), Mimihagi is the right arm, then the other two will be revealed later on.
