I like how you try and ask a probing question that helps us get to know them On a deeper level than surface interviews! 👏🏽👏🏽👏🏽👏🏽👏🏽👏🏽also not many commercials allows me to stay present with you and the interview!
I have been a bbq firewood seller for 20 years and the one thing I stress more then anything is the quality of the wood and fire management. Get those 2 things rite and you are well on your way to perfect bbq. Also learn how your pit cooks and the size of the wood it likes to feed on. The final thing is to learn and watch how your pit is drafting. Wind direction plays a great role in how your pit will cook.

I have to laugh because it seems like Texas BBQ changed your life the way it changed mine. I grew up in NYC and honestly 20 years ago there wasn't much, but there were a few places I regularly ate at like Brother Jimmy's BBQ which were good and I later found out it's Caroline style, but when I went to Texas it was a total game changer! By the way, Italian food is my favorite and I'm dying to go to Italy one day!

Moo’s Craft BBQ, Slab BBQ, Ray’s BBQ and Heritage are some major players right now. The laws are changing in favor of the offset smokers which means more businesses will be able to flourish. LA Barbecue from Austin has had their eye on the Los Angeles market for a while now.
My God, the people of Snow's are the very definition of modesty. If you didn't know they've been rated the number one bbq joint, you'd think they were just grilling in the back yard. I was going to make a trip there this year, but the virus had other ideas. Hopefully next year.
Interview was great. I got choked up watching Ms. Tootsie's interview...I am African American female, Ms. Tootsie reminds me of my Sweet Grandmommy, a hard working woman, born in the Jim Crow South, who passed away.
Clay said they don't mop the brisket... However, another interview the basting or mopping of the brisket is done within 2-3 hours of the brisket being on the fire, and continues throughout the cooking process.

Was here in 2011 and everything was great, but their pork steak was fucking amazing!! I still dream about it 9 years later.

Difference consistency but both delicious!
