My grandparents had 3 almond trees and a walnut tree. There were always coffee cans full of shelled nuts to munch on as a kid as much as you could hold. Everybody hit there house if they wanted or needed almonds or walnuts at chtistmas. There long gone now but the memories remain. Funny I don't remember my grandma' doing anything with them no baked goods, no roasting there were just in coffee cans.

I make mine like this, and I use a cake base kind of like an app!sauce cake. It is a family favorite. Some of the dried fruit I use is: dates, cherries,cranberries, pineapple ect... Anything I can find. I am excited about using currants, I got a big bag at the buffoon shop. Love using dried fruits.

I like to add pistachios for the green and dried cherries for the red. You are right... there is something verrrrry unnatural about those traditional green and red candied cherries. They look so nice but taste nothing like a cherry

I love what they call a Florida White Fruitcake. It also has lemon extract in it but red and green cherries but not that citrus fruit. Well there is a lot of fiber in that cake which is a good thing in some cases.

I have a very similar recipe that I came up with because I hate maraschino cherries, candied citroen, candied fruit in general. I called it "Fruitcake for People who Hate Fruitcake." Uses my mom's batter recipe which is almost black as it has molasses in it instead of your honey. We love it!

Never thought to put pumpkin or sunflower seeds with fruit cake. Love them both! Didn’t know baking soda and baking powder would turn the pumpkin seeds green. Interesting scientific fact😂
Another reason for cracking eggs on the counter is to prevent possible e-coli from entering the bowl. shells in the batter are not a good thing. Safety first!. This cake looks delicious!

I hope to make your version of fruitcake this Christmas. Do you think fresh orange zest and lemon zest would go well with the pumpkin spices in this fruitcake or would I be better to not even consider it? Also...do these do well with long term storage or would it be better to freeze the the baked loaves if baked a couple of weeks ahead? Thanks for all your wonderful recipes and your live videos. Kathy Fernaays, the difference is only in the consistency. You can have liquid honey which is usually a beautiful amber colour generally in a bottle or you can have a more solid honey a creamy colour and most often sold in tubs. Sometimes you can substitute one for the other, but, I wouldn’t in this case as you don’t have a lot of liquid or batter in the cake in the first place.
Same here. I don't mind the candied cherries, but always hated the candied peels. Citron was about the worst taste ever. It's like someone said, "Hey, let's take this stuff that tastes like bug spray and put it in our holiday baking!" Brushing honey on top is a much better idea than soaking in the alcohol too. Much tastier!
My family's fruitcake does not call for candied fruits. It calls for cane syrup (or molasses) in place of the honey, uses dates instead of prunes, and uses mincemeat. Other than that, it is much the same as yours. No alcohol, and no nasty candied fruit.
Currants are actually dried Black Corinth/Raisin de Corinthe grapes not the fruit black currants. I thought they were from black currants for years too. I think it was the French on a bag of currants that made me look into it because as all Canadians know, raisin is French for grape !

The dried fruit is normal for my cake as well, no nut's as other half is allergic and both of us don't like candied peel.

I like to snack on chilled prunes. Sometimes I use chopped prunes in place of raisins in one of my cake recipes.

Zest would be loving me! However long-term storage I would rather you freeze these because they are not soaked in alcohol
