To anyone that finds this vid on their artisan "journey" I guess, I own and have used the Zero, Hien and Otsu v2 on every variation.
Simply put, the different densities are more of a way to fine tune the pad for your preferences. For example, if you like a little more speed and are willing to sacrifice some control, then get the mid. If you want more control and less speed, get the xsoft. *The soft is essentially the "default" version of the pad.*
Now as for the different pads, the zero is their control pad, it's their slowest pad and yet it is still faster than most control pads on the market. Personally I like the soft for this and think it's a great place to start if you are completely new to artisan pads or mousepads in general. It's a safe pad.
The Hien is a hybrid pad with speed more in mind. I personally like the xsoft of this as it softens up the texture of the pad a bit as well as provides some more stopping power to the pad. Great pad for tracking while the xsoft base could provide some control that would be helpful in click timing. Personally I still find myself straying away from this pad as the most annoying thing about it is that it pinches and pulls arm hairs due to the texture. If you aren't that hairy or use a sleeve than it won't be a problem.
The Otsu v2 is a middle-ground between the previous. This pad has some texture like the Hien except not as rough, kind of smoother. Doesn't have issues with arm hair lol. The pad itself however, looks incredible. It has a jacquard weave (the zigzag pattern) that looks premium. Like if Mercedes decided to make a mousepad, this would be it. Personally I like the xsoft. It once again softens up the texture a bit and gives it some stopping power while still maintaining the speed. Not as much as the Hien from my perspective but it's enough. I find this at the moment truly a hybrid pad and good to use in any game.
You might be wondering why I have not mentioned the mid on any of these and the reason is that I find that they don't equal the value that I pay for them. When you get an artisan it is expected that they are high quality. They are but they lack in areas that should be good at this price. You would expect these pads to not move on the desk and while the soft and xsoft are great the mid does not have the same outcome. Also one of my favorite features of the pads are that they are slightly above the edge stitching meaning that my mouse can glide across it and I don't feel the edge at all. This is something I have never felt on any other stitched edge pad. While they aren't bad pads surface wise, I just don't feel they are on the same level overall. I have also grown accustomed to the softer feel of the other pads.
Lastly, I want to make a note that these pads, while overall are some of the best quality on the market, do wear in over time with constant use. This will essentially slow down the pad a bit adding more control to it. This happens with any of the pads and comes as a pro or a con. For the zero, I find this to be a con as the pad to me already has good control, so when it slows down a bit, while still a good pad, is not as enjoyable (to me) as it was fresh out of the box. However the opposite is true for both the Hien and Otsu. They feel very fast out of the box and at first I just kept finding myself wanting to go back to the Zero. However, I took the time use the pads, adjust to them and they did break in over some time gaining some (in my opinion) needed control. They became a delight to use, with myself gravitating to the Otsu for the reasons I stated above.
Hopefully this wall of text gave you some insight to the pads as with so many options available can be overwhelming.

A random steelseries qck 2mm thick is better than any of the pads you listed. Cheaper, better tracking, no x vs Y axis discrepancies in the mouse feet resistance, no weird rounded borders, and it lasts at least 10 times more than the overpriced mats you paid for.

I have an Otsu Soft too but that's way too fast for me. What I think I basically need is a pad in the middle of the Zero and Otsu. Hello and thanks for the video, it was good information about the different mousepads. However It wasn't clear for me which one feels more grainy ? I had a razer goliathus speed and a razer goliathus control , where the speed feels like a qck , the control feels more grainy like rough texture and that's my favourite mousepad. I don't know if you tried the razer goliathus control but I think you described the Hien as more grainy ?? But this is due to be ''hard'' or if you get the soft or extra soft will feel less grainy ??? If you can let me know which one it's more grainy and similar to the razer goliathus control that would be very good for me as that's my favourite. I had as well a GSE-RE and is quite slow but soft at the same time, I rather a bit faster but very important rough texture grainy not soft. So which one should I go for ??? Thanks again
