BARBADOS LEAD PIPES

- This is a recipe for an ultimate Bajan Lead Pipes. These sweet treats made almost like a coconut sweetbread got it's name because of it's long shape and hard texture when one bites into it. It is one of Barbados favorites and you will find them in every household.
Recipe calls for
4 cups of flour
1 teaspoon ground cinnamon
1/2 tsp grated nutmeg
1 stick unsalted butter
1 cup brown sugar
1 1/2 cups grated coconut
2 teaspoons mixed essence
1/2 cup water
Preheat oven to 350 degrees
Add 3 1/2 cups flour along with the cinnamon and nutmeg to a large bowl and mix will.
cut the butter into cubes and rub it into the flour.
Add the sugar and coconut to the flour mixture and knead well to mix.
pour in the essence and water and bring the mixture together to form a dough, it will be a little pasty.
Gradually add in the remaining flour and knead in the bowl for 10 minutes
Transfer the dough to a floured work surface, flour a rolling pin and roll the dough into a 10x10 square.
Using a sharp knife, cut the dough in half, this should give you about 10 Lead Pipes.
place on baking sheet, you can place them close together. score the dough by making crisscross cuts.
Brush with sugar water and bake for 20 mins, at the end of the 20 mins remove the pan for oven brush again with sugar water or dust with sugar and return pan to oven and bake for another 20 - 25 minutes or until done
Remove from oven, rest in pan for 5 minutes and then transfer to wire rack to cool completely
Serve and enjoy.

Hi Dorian, just remember there are called Lead Pipes, so there're very hard. If you want a softer bread that taste just about the same, you can check out my coconut sweet bread and give that one a try first. Happy baking

O goodness thank you for this recipe,my cousin told me about led pipe but I have never eaten them or even see them,I left Barbados a long time ago and I never know about led pipe,you are amazing,l am going to try your recipe
You are so welcome, be aware led pipes are very hard, there're good but that's why there are called led pipes there can be hard to bite into.

Good morning Joyce! My grandmother was a very good cook and baker, around the holidays she bake for her neighbors as well as herself. My sister and myself, had no choice but to assists. That though me a lot, and practice helped me learned to measure out the ingredients.

I never had them but my brother used to rave about a roadside bakery ( i suspect) called Gwen Workman ( could be misspelled ) and her lead pipes. I will forward the recipe to him in Denmark he will be delighted.

You can if you prefer, usually led pipes don't have raisins. but there's nothing wrong with you personalizing yours.

I dare not show this video to my older brother; the guy loves anything that is made with flour; he lives in England, the last time my dad visited Barbados he stocked up with sweet bread, led pipes, current slices, turnovers, you name it. I almost fell over when he told me that. Looking good my dear, I have never attempted to make them but trust me if and when I decided to make them he will be here in New York, lol. Xoxo

These were a favorite after school but I have never seen anyone making them, I would go to the shop outside my school and wait if I had too then walk to the bus stand because I missed my school bus.

Thank you, hope you can really come to visit me here in Holland. I made the rock cakes they were so good, but my kids didn’t like them, they were born here and the only bajan food they like is macaroni pie.
Lol that's my youngest daughter, I've tried to get her to eat some of my bajan foods but she don't like to eat it, even coconut water she would not drink can you believe that. I however took her to Barbados last year and to my surprise she ate cou cou that a family friend made, she has been asking me to make it ever since, go figure. My husband and I have been talking about doing more traveling, we're waiting for this corona virus to get under control and then we will definitely visit you.

leave the 'sugar water' out of the bread recipes. Less sugar-=healthier.
