I am a meat eater but I had vegan nachos at a hut in Kailua a few years ago. I liked it better than meat based. It was pulled "pork" using jackfruit, cashew cheese, pinto beans, and the other normal veg. I was not only enjoying the dish but didn't have the heavy feeling I always have when eating nachos in a restaurant. I was really impressed.
