    RECIPES:
    SAUSAGE GRAVY:
    Brown the ground pork, whatever amount you want to use.
    Sprinkle flour over the browned meat. (I use approximately 1/4 cup for 1.5 lbs. of pork.)
    Add milk until desired consistency. Season.
    BISCUITS:
    1 cup flour
    1/4 teaspoon salt
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/3 cup butter, cold
    3/4 cup milk
    3/4 cup grated cheese
    1/2 teaspoon garlic powder
    Preheat oven to 350 degrees. Whisk together flour, salt, baking soda, and baking powder. Cut the butter into the flour using a pastry cutter, fork, or even by hand until the mixture resembles wet sand. Stir in the grated cheese and garlic powder. Slowly add as much milk as needed to form a soft dough. Drop onto cookie sheet. (I use a cookie scoop) Bake for 10-12 minutes.
    CHEESEBURGER SOUP:
    This is a single batch recipe. For the soup that I canned in the video, I multiplied it times 10.
    1 lb. ground beef
    1/2 cup onion, chopped
    3/4 cup carrots, shredded
    3/4 cup celery, diced
    3 cups potatoes, peeled, diced
    1 teaspoon basil
    1 teaspoon parsley flakes
    4 tablespoons butter
    3 cups chicken broth
    1/4 cup flour
    salt and pepper
    1 1/2 cups cheddar cheese
    1 1/2 cups milk
    1/4 cup sour cream (optional)
    Brown beef and set aside. Saute onions, carrots, celery, potatoes, basil, and parsley in butter until tender. Add broth and beef and bring to a boil. Reduce heat and add flour mixed with milk. Heat until just before boiling and add cheese, salt, and pepper. Cook and stir until the cheese is melted. Remove from heat and blend in sour cream before serving.
    BEEF CHUNKS AND NOODLES
    Cook beef cubes in water for 45 minutes to an hour. (or until cooked through)
    For 1 lb. of beef cubes, I used approximately a quart of water.
    Once cooked through, add noodles. If the noodles are fine or thin, you can turn your heat off and they will soften in the broth. If you are using thicker noodles, you will need to gently boil them until they are softened.
    Season and enjoy!

    I live in PA, grew up on PA Dutch cooking. A week or so ago I found a 10lb box of irregular/ends of bacon$44.99 marked down to $24.99. Divided that up, vacuum sealed them in portions to grind with roasts for burger. Meanwhile, I made sausage gravy, tossed in some cooked & chopped thick bacon over homemade buttermilk biscuits. I buy in bulk from an Amish store, can, dehydrate or freeze. There’s nothing like a jar of soup from your garden in February

    As a South African I found this very interesting. Very different from the way we cook. We also call "hamburger" and "sausage" just "mince". A hamburger to us is is a bun with a "patty" on, like a Big Mac. Sausage is fish or pork gut stuffed with mince.

    When you cook it’s like we’re all right there with you! My hubby would love that soup! Definitely gonna give that a try! I love canning, it saves us money, time and it relaxes me to be in the kitchen. Breakfast for supper is my husband’s favorite meal! He would love that sausage gravy! Teenage boy appetites are like trying to feed Pharaoh’s army! 😂 My son would invite a couple of friends over and those guys would wipe me out. (I miss those days!🥹) I love everything you do Mary!     Mary. We cannot put grease down our sink. We have a septic system. Would really mess it up. I love the idea of canning soup. Great video.

      Just use a colander with a pan under it to catch the grease, then dispose the grease. That's probably what Mary did.

      Agree! I always use a colander and put it in a dish and dispose of in a tin in the trash.

      Sop up extra grease with paper towels and throw in trash.

      I noticed the same thing and was shocked! Maybe it's because we have a septic system too? Still seems even if you have city sewer the pipes in the house would get clogged.

    Mary loved your videos. Did you can your soup in a water bath or with a pressure cooker? Little idea for the roast try in a crockpot. I put a thin layer of onions add roast. I put olive oil, salt and pepper. Then sprinkle ground ginger on top. Cook for 4 hours if not frozen or 6 if frozen. Add just a little water.

    Another option- when I make French toast, I put cinnamon in the egg mixture (no salt or pepper). It is really delicious.

    Really interesting Mary watching the meals you cook up,here in the UK we don't have almost any of what you cooked in this video, we have gravey but it's brown and we would pour it over our meal apposed to it all going in a pot,we don't have soup as you make,we call that a stew but again the gravey would be brown and never made with milk,so interesting watching just how different the cooking is. I had to laugh that your boys ate the whole roast! 😆 my daughter absolutely loves beef and makes short work of any meat! Great video Mary,take care.

    Mary, I’m enjoying your channel so much. I noticed your cookware and vegetable grinder and realized it’s the same set I’ve used for 22 years. The brand was called Towncraft back then. A representative came to our home and cooked an entire meal for a dinner party. It’s ‘waterless’ cookware and I love mine.

      I have the same grinder that belonged to my MIL. I believe it is towncraft. She had a lot of their cookware which I inherited. There are a few pieces that have "pockmarks" which I'd like to replace. It's supposed to have a lifetime guarantee so I emailed them about it. Sadly I got no response.

      @@selacy1965 Keep trying to find them. When I bought mine, a friend had the set of pans. When their home burned, she contacted them to send new handles as they had all melted. They sent her an entire new set of all the cookware she had.
      We also got the Dutch ovens, all the bakeware, and the electric frying pan.

    They all looked great to eat. Unfortunately cooking for one person now is a waste of food. Yes, I know you can freeze it but right now freezer is full. Have food in there that I haven’t eaten yet. But thank you Mary for these great recipes. Life has really changed for me. ♥️😊👍🌟

    I love soup, making soup and giving soup to my loved ones. I just bought two heads of escarole, I made 1 soup Italian wedding meets Escarole and beans=2 great Italian soups in one. Rolled up meatballs that I had flash frozen and kept in freezer defrosted them and put them in. The other soup was kinda basic just broth carrots onions garlic and a little bit of the greens and made it with cheese tortellini. My husband said it tasted like wonton soup! Funny it did, even looked like it w the tortellini floating around lol. My MIL loves my soup so much she takes it back with her and had it for breakfast! Lol I’m always making it…never canned it but I do freeze it in containers for upcoming meals and even for summer dinners 😊

    When I was a kid mom always canned beef chucks and then made noodles to go with it. That was the best thing! Also, she was would use the canned beef and grind it up and make beef sandwiches. So yummy!!

    I always cook my roasts that way, I put them in the oven in my large cast iron skillet and cover with foil, low and slow.

    This is how I make roast , I pan sear it on all sides with a bit of oil in a cast iron skillet, then pop it in the roast pan with a bit of water cover tightly with foil and bake at 400 degrees for. N hour turn the temperature back to 300 for two more hours . I like to do this Sunday morning then it’s falling apart by the time we get home from church. Would you please share your brine recipe for the beef chunks ,I like to have canned beef too . I’m blessed that we have our own grass fed beef .
