HOW TO MAKE JAMAICAN BLUE DRAWS / DUKUNOO

  • While growing I used to watch my mother and father make blue draws as
    I write this my eyes are filled with tears as I remember them in the backyard, my
    mother would wait until my father get home from work then both of them would
    make this amazing Jamaican blue draws, also known as duckunoo or
    tie-a-leaf, it is a delicious treat, made from sweet potatoes, green banana,
    cornmeal, freshly grated coconut milk, and a blend of spices, wrapped in
    green banana leaf and boiled for a moist and incredibly tasty pudding.
    . 1 Cup All-Purpose Flour or Gluten- Free Flour
    . 2 Cups Cornmeal
    . 1 1/2 Cups Cane Sugar or Maple Syrup
    . 2 Cups Coconut Milk
    . 1/4 Tsp Nutmeg
    . 1/2 Tsp Cinnamon
    . 1/2 Tsp Salt
    . 2 Small Sweet Potato
    . 2 Finger Green Banana
    . 2 Tsp Vanilla
    . 1/3 Cup Raisins (optional )
    . 1 Cup Grated Coconut or Shredded
    . Fresh Banana Leaves
    INSTRUCTIONS:
    .1 Prepare the banana leaf by cutting along the midvein of the leaf
    and discarding it. Cut the leaf into rectangular pieces. quail or wilt
    banana leaves by passing them over an open fire, or bring a large
    pot of water to boil and dip the leaves in the boiling water until they
    are quail. Set aside
    .2 In a large bowl add sugar, cornmeal, flour, salt, nutmeg, and cinnamon
    mix to combine . Set aside
    .3 In another large bowl grated the sweet potato, green banana, and the
    coconut using a box, grater. Process until the mixture resembles a coarse
    batter or add coconut milk, vanilla, green banana, sweet potatoes to a
    high speed blender.
    . 4 Stir the dry mixture into the wet mixture and mix until combined. Then
    fold in the raisins ( if using any raisins) .
    . 5 Place about 3 tablespoon of the batter onto the center of banana leaf
    Bring the edges of the banana leaf over the batter. Fold the edges under
    to make a tight package, then tie blue draws with the strips of banana
    bark or baker twine. Repeat until all the batter is gone.
    .6 Bring a large pot of water to boil over medium- high heat. add blue draws
    parcels, return to a boil then let it simmer for an hour.
    .7 Remove each of the blue draws from the pot using a tongs, and place into
    plate. Remove the tie from each parcel and serve. ENJOY......
