What I love about restaurants that have spicy challenge in Indonesia is that they always use fresh chillies and the sambal are house made. I did a spicy sushi challenge in the States and they used hot sauces that come in bottle with extracts that has high scoville level. Hot, but doesn’t taste good at all!
@@philippuntoro9710 that’s not entirely true. More and more people are starting to like spicy food over there. The shrimp paste part is true, though - they don’t like the smell. Sauce and sambal to them are two different things. Sauce is liquid and sambal is more like a chutney. The sushi challenge that I did, they made a chutney, but instead of making actual chutney with real chili pepper, they used hot sauce and mixed it with it tomato. Come on, it was a restaurant and made by a chef, I paid $120 for the dish.
@@thepinkcarousel I just don't think you could made a chutney that hot. I have been trying to get my hands on the newer dragon's breath chilis, but simply can't find them. I have to order my own seeds online, and grow my own hoping they grow into what I want. I live in a decent size city too being Calgary. If I go to an area of town with a ton of asian stores I can get decent habaneros, but that is it.
@@JohnFreedman0 you can… just multiply the amount of habanero or bird eye chili pepper until it reaches your desired level of hotness. For example we usually include: 1 tomato, 5 - 10 red chili pepper, and just as many bird eye chili pepper you like depending how hot you want it to be. Season with salt, pepper, garlic. I use habanero to substitute bird eye chili cause it’s easier to find here, and just one piece makes a whole lot of a difference.
