What about it is "true to the real world". Double clutching isn't a faster way to shift, nor does it make the car faster. Theres no way to get a speed boost while driving in real life.
AWD cars can also speed boost, when you're in second gear press the handbrake and the normal brake at the same time, if you time it right with the RPMs, it will speed boost, but it does not work on all AWD cars.
In case you didn't know you don't even really have to let up on your trigger you can just press R1 before hitting second gear it'll still do the same thing
When you her the second gear shift sound making the car go from 2nd to 3rd gear as it switches to third right after the second shifting sound hit I think handbrake? While letting off accelerator and floor it quickly after handbraking for 0.2 secs or something

Need a clearer explanation on this, been sat here for half an hour and it doesn’t work no matter how little or how long I press the handbrake and I’m waiting for the second gear and it still does nothing
You are getting a speed boost - try drag racing 2 banshees - one car with and one without the mid drive - some cars just have a less effective one than others

This is not what double clutching is or does lol. Infact it doesn't work anymore since the 90s Modern cars get no benefit. What is doing in gta5 is forces the turbo to spool up instantly. Double clutch made jamming the gears a bit easier ...but modern day sticks they won't benefit. But what do I know, lol

Yes it's possible, if you're struggling to double clutch a preferred car, try using both brakes. But be aware that not every car can double clutch.

Yes, you can keep hitting the boost constantly when drifting to keep your momentum going

Your not getting a speed boost, your just spinning your wheels back up to speed from slowing your car down by stopping the wheels.
