This week I made cabbage rolls which take some time , but produce a great, big pot , enough for dinner, lunches and you can freeze the rest. If the labour involved puts you off, you can make a deconstructed cabbage roll, with the mince browned and served on the side with the shredded cabbage. I got a big batch of cheap lentil Bolognese made this morning. Perfect on mash, a jacket, bed of polenta or pasta. Cheap as chips. Also made a pan of Thai red curry roast pumpkin soup.
For the stock you could invest in the tin of Bouillon stock you can get vegetable one there is less bad ingredients and salt. Or boil up meat trimmings or the carcass of the chicken and veg and make stock and freeze it. Like I know it takes time but you know it has good ingredients.What's lovely if you put tomato puree in the mince pie as well with lee and Perrin's. Or stock up every week on one pantry item for the cupboard so you don't have to go out to get flavourings.
Love Lidl I’ve got some lovely shopping recently from there and tried some different food too and reasonable prices too. Barley, buckwheat or lentils are lovely in stew or chickpeas or butter beans :)
Save the skins of you onions to feed your indoor plants. I keep them in a ziplock bag and garb a handful once a month and soak in four cups of water for about an hour. Then I give my plants a nice drink of this liquid gold water. My orchid is now having a second bloom this year and my massive poinsettia from last year is bushy and has lovely red leaves.
I have started saving onion skins and all vegetable scraps in a freezer bag in the freezer. When the bag is full, I make vegetable broth. Super easy (put all scraps in a large pot of water and simmer for a while) and I know what's in it. I then freeze the broth for future use. "Old" glasses look great!
very nice. I have made a vegan banana cake today plus some chocolate and cherry cookies. I have been using up some vegetables and yesterday used the slow cooker to make a soup.

Put leftover potatoes in the oven with mushrooms, pointed cabbage, kale and paprika for lunch box tomorrow. Going to eat a wholegrain pasta dish with kale and onions stewed in milk with parmesan. Tomorrow is miso soup with smoked tofu and What veggies I’ve Got on hand. Maybe making date balls or oat squares too. Will keep at it all week, you are an inspiration ❤

Lidl do a goid casserole mix for 34p, for cheaper dumplings buy suet n just mix it with flour n water this gives u same as a dumpling mix but cheaper. X
You can make dumplings with butter flour and water, google it, although stuffing balls are a genius idea. I made a mince and onion pie last weekend and had loads of mince mixture left and made a cottage pie out of it. Leftovers at their best. Your pie looked delicious x
Another tip if you are up for it! My butcher has free “dog bones” in a bucket. Take a bag for your”dog” and boil them with apple cider vinegar for 24 hours. You can use a slow cooker on high for this. You can add your veg scraps but I keep mine simple! Homemade bone broth is great. You can add spices to it later if you have a cod or aching joints

I was curious what kind of "budget food" can be cooked in this day and age in the uk in 2024. Thank you. After all it is not Ready Steady Cook from 20 years ago where the contestants had £5 budget.... What shocked me was the price of 1 pint of milk for 89p, 99p for bay leaves and 52 p for rosemary....( I have bay leaves and rosemary in my mini flower pot garden). In Aldi they are still selling organic 4pt milk for £1.79, I would personally not pay 89p for 1pt of non organic milk. This budget food seems false economy as that stock cubes were full of chemicals and other nasties. ..so was that 25% fat beef as it was not 100%grass fed. Thank you for giving me an idea of making my own shortcrust pastry and looking out for different kind of fats than olive oil. I would rather eat nothing for 24 hours just to make myself homemade organic soup and baked organic bread. Fasting is also healthy.
Yeah, milk at £1.45 four pints is a bargain, it lasts for 10-14 days depending on how cold your fridge is. 1 pint for 89p is criminal when you could freeze half 4 pints, put it in a smaller container. Over the course of a year, that's a saving of £27.56p, that freezer will save you money, use it. Whole Milk is packed full of nutrients.
Agree. Our brains are mostly fat. Studies have shown people with raised cholesterol seem to be protected against dementia. And I just discovered pig lard is a brilliant source of vit d.
Yes, for years I was told to eat mince meat 5% fat, but now I've tried 20-25% fat mince meat (i drain some of it off when cooking) I find it much better to cook and the mince is well tasty. All the flavour is in the fat. I made mince and tatties yesterday for the first time, and it was absolutely tasty, a cheap nourishing meal.
Check out Dave Ramsey he is a financial wizard. He has a RUclips video, and he steams every day for about 2 or 3 hours. His advice is invaluable and learnt the hard way.

Cabbage makes amazing okonomiyaki (a Japanese pancake that's like bubble and squeak, in that you can chuck whatever in it).
Cowboy beans is the ultimate budget, winter, comfort, healthy (ish) dish in our household
Try roasting slices of cabbage in olive oil, lemon juice & garlic - delicious!
