The beef short ribs are stir fried with 3 different kind of chili peppers, namely red chili, green chili and dried chili peppers. The combination of these 3 not only perk up the dish but also give a nice pop of color. The beef short ribs are first marinated with ingredients such as soy sauce, granulated garlic and cooking wine, then briefly sautéd, and stir fried with peppers in a wok.

Ingredients:
Beef short ribs 1,000g
Chinese cooking wine 1 tsp
Soy sauce 1 tsp (for marinade)
Black pepper
Granulated garlic
Egg 1
Corn starch
green & red chili pepper 200g
Garlic greens 350g
Dried red chili pepper 10g
Garlic 5g
Onion 150g
Peppercorn oil
Oyster sauce ½ tsp
Soy sauce ½ tsp
Sugar ½ tsp
Sweet black rice vinegar ½ tsp

In 80' korean immigrant butcher came up with that "3 bone" style cuts. Now, known as "korean cuts". This Chinese marinate is somewhat fusion, but looks pretty good.

This recipe calls for garlic greens, but he uses green onion. I had three bunches of green onion and it still wasn't 350 grams. 350 grams is a massive amount of green onions. I used 100 and that was plenty. Also the amount of marinade and sauce is miniscule. My beef had no flavor and there was no sauce for rice, in fact everything was bland. I did find his yellow cooking wine at the asian market and it tastes just like sherry. I doubled if not tripled the sauce and marinade ingredients, added some beef stock, water and WALLA, tasty!

You gotta get all the blood out of the ribs first by running under a tap in a bowl and doing it until the water is clear. That's how the Koreans do it and I can see why

我自己的经验是比较大快点的牛仔骨用筷子夹不太稳容易滑,用fork要稍微方便点。而且这个菜本来就算变种西餐。
