ew, those mushrooms. Gray and mush-y. Start with a DRY pan, caramelize the mushrooms, salt halfway through and continue caramelization. then some oil, the shallots, and sausage. This also makes it so you don't have to clean the pan in between everything. Just keep everything in the pan (or put some aside to top) and pour the eggs on the filling.

Looks gross and burnt. Why add oil on top at the end when he basically fried it already
