Rock stars (depending on the decade) hated everything that was pop, which is why they made different music, with different ideals and different attitudes. Yeah, they have guitars, but they also raise the middle finger to the industry.
I think the term pop is used in it's broader (and more etymologically correct) sense: all these men have been and are popular icons, people that have insired their generations and made many ladies (and some guys) scream in awe :D until the early fifties, jazz was the most popular musical genre so it was "pop music", rock music was "pop" before what we now call pop even existed... so yeah, it works if interpreted this way :)
