Have only ridden them in two totally different scenarios. Biggest difference would be mapping and suspension. XC seems to have more torque down low, SX a bit stronger mid to top. XC Suspension is obviously softer (mainly valving), but with the air fork the "spring" pressure can be adjusted.
Wonder how the sx would be for soft enduro/single track? The XC is considerably more expensive. I'd be nice to have a do everything bike. Maybe just drop a tooth on the front sprocket and an 18" wheel when you want to ride trails?
With the air forks you can increase or decrease air pressure which is effectively the spring rate. Yes valving is different but you can make some adjustments.

I ride my tpi 300xcw on the local track n it’s too soft. But a lot more fun than my 250rx.
The 300xc is the perfect in between bike. Can still hit the Moto-X track completely stock but has all the off-road goodies.
