Just a suggestion for cooks new to the crock pot..I find that heavy cream will curdle and thin out to much if it is in the crockpot the majority of the cook time. I would use a little water, or bouillon/broth for the cook time, remove the chicken ladle out a lot of the rendered juices, and then whisk in the cream before returning the the chicken and adding the remaining ingredients. Turn it on low at that point. You can also add the cream and cheese at the very end of the cook.

I did a lot of the whole chicken for rotisserie style in the crockpot...amazing and easy to prepare my meals for part of the week. Is there a way you can do a barbacoa in the crockpot or even lengua.

I would cook the chx. alone first (before adding cream), so that I could strain the white protein curdles out of liquid. Then finish cooking with the cream. Like when you make chx. soup you want a clearer broth. The congealed protein makes me think of maggots ever since I was just starting to cook.🤦🏻♀️
Can you just add the uncooked pasta to the crock pot and cook it that way? If so when do I add it? Reason for asking is that I live alone and have limited mobility and I like to make meal cleanup as easy as possible since my kitchen--my whole house actually--isn't really designed for a person in a wheelchair, but I'm working on fixing that. Thanks in advance.
If you add the dry pasta raw you need to add a good amount of stock so that it cooks. Also it might take 8 hours to cook through the pasta so you'll have to put the pot on in the morning to have your dinner in the evening.
If you use fresh pasta instead of dried (which they sell in the supermarket, although its more expensive) I would add some stock/broth after the chicken has cooked and place the pasta on top. As long as the pasta is submerged you should be alright and it will soak up the excess liquid. It should take 1 extra hour to cook through the fresh pasta on low heat or around 30 mins on high heat. I would personally deviate from this recipe and add the cream as a last step after everything is cooked as you can see the cream has curdled in this recipe and if you add it at the very end after everything is cooked, it won't.

Thanks for the tip about the milk curdling. I found the same issue trying to make a Zuppa Toscana and added the cream too early.
Evaporated whole milk is another option, but the Mexican crema has that wonderful flavor.
