Thanks for the questions @mundotazo! At this scale it is still done manually, with a fork/shovel. Though I'm sure you could look at using other commercial root vegetable/tuber harvesters, such as those designed for potatoes or carrots.
I'm grown it a handful of times. I've dug up some monsters. It reminds my harvesting dhalia tubers for than sunchokes. It's easy to damage the tubers when you harvest. I've had garden plots that looked crated after harvest. It's awesome that you are offering products from yacon. It's good eating. The inulin sources available in united states are made from chicory or sunchokes.
We freeze dry them and use them instead of potato chips for dips. Just blanch briefly in boiling water with a little sea salt.
