  • Pork buns, or bao, can be found everywhere in China, but if you’re looking for the best, northern China is the place to go.
    We went to the northern city of Tianjin, the birthplace of bao, to learn how to make them with a chef whose family has been doing it for over 200 years.

    I love how down to earth this boss is. Typically for traditional foods the master will say stuff like, oh you can’t make this unless you have 5-10 years experience, but here he’s like, okay, I’ll give you a generous estimate to when you can make a decent Bao - 7 days.

    I love baos. In Hawaii they're called manapua. Made differently, but similar.
