That looks delicious! Did the pineapple make the meat mushy with the leftovers? I find it can sometimes.
I think as long as the pineapple is heated high enough to “kill” the enzyme that can denature protein, you don’t have to worry about it Pre-digesting your food!
We had a few leftovers until the next day and I didn’t notice anything different.

Question:
Can I smoke a pre-cooked roast? We don’t have time to smoke the whole thing before Easter dinner, so I thought I’d cook it the day before and then throw it in the smoker on Sunday to give it some flavor.
did we get some pull times?
What temp would you suggest to let these rest for several hours? For example, if i wanted to do a pop up restaurant and keep them warm after the cook for like 4 hours of service without ruining them or overcooking. Thanks!
Toss them in a cambro and don’t let them go under 140f ideally maybe 160f ???
