    Ingredients for caramel syrup (焦糖水):
    170g sugar (白砂糖)
    160ml boiling water (热水)
    50g butter (牛油)
    Batter :
    4 large eggs (鸡蛋) - grade A
    80g sweetened condensed milk (甜炼奶)
    1 tsp vanilla essence (香草精)
    100g plain flour (普通面粉)
    1/2 tsp baking powder (发粉)
    1/2 tsp baking soda (苏打粉)
    ** Leave the batter to rest for 2-3 hours. Then steamed over high heat for 30-35 minutes, the result of cake will have greater honeycomb effect.
    ** 面糊倒入模具后,可休面2-3小时才蒸,蛋糕蒸熟后,会有更多蜂巢效果。

    跟着老师的做法,这蛋糕很好吃,Q软 焦糖味和淡淡的甜。因为颜色太黑了,所以再尝试做第二次,这次把糖煮成茶色(没有完全溶解)就加热水。完成后的蛋糕虽然Q软一样,但是少了焦糖味而且太甜了!老师说过焦糖液带点苦味才能平衡甜味,所以外表好看的蛋糕就失去焦糖的意义了!

    今天做了焦糖蜂巢蛋糕,非常成功,然而有点甜。也许是F&N牌子的炼奶糖分太高了。谢谢Kathrine老师的分享。

    Leave the batter to rest for 2-3 hours in the fridge is it Katherine? If I want to hv better honeycomb effect. I like to watch your channel, your explanation is very clear, step by step

    Dear Ms. Kwa, Greetings from Bangkok. My daughter-in-law is Malaysian and was missing Honeycomb cake. I chose your recipe as it was the simplest compared to the others. I made it and she loves it. I need to bake again but just noticed that you suggested keeping batter for 2 to 3 hours before steaming, is it fine to keep in the fridge as it is so hot these days afraid that the eggs will cause problem being kept outside. The first time I made, half recipe to try but did not keep the batter to rest, steamed straight away. Thanks so much.

    Hi Kathrine.. thanks for the resipi.. if I don't have plain flour to bake the cake now..can I just use multy purpose flour (self raising flour) and add a little baking powder..?

    Do your cake and other delicious pastry recipes using baking powder use single-acting baking powder (Alsa or Dr Oetker brand) or double-acting baking powder (Clabber Girl or Argo brand)?

      Thanks for the clarification! Using the right type of baking powder can make also of the difference in the world in a cake or other recipe requiring baking powder. The brands differ - some single-acting when mixed / exposed to liquids and double-acting, when exposed to liquids and then high temperatures - steamer or oven.
      and don't forget to allow / offer your viewers / followers, who lived outside Singapore, Malaysia, and Hong Kong, the option to buy your cookbook/s.
      Amazon might be an option....

      你好,因为怕炒菜锅水干了穿洞,我也是用烤的。我是参考其他人的,180度20分钟然后160度30分钟,希望可以帮到你!
