Choreography means working out the steps & practicing beforehand, something anyone entering a contest or putting on a show would always do. Simple promenade steps can be done impromptu with signals to indicate what's to be done. But complex/acrobatic steps need to be choreographed & practiced often before they will be, 'right on the night'.
