I made this for my in-laws yesterday and holy moly people devoured the whole cake!!! The cake was so fluffy and moist, with just right amount of coffee flavour. Just one thing I did differently, I used mocha whipped cream to frost the cake and it worked! Thank you so so much for your amazing recipe xo
Thank you for actually using cocoa powder! Yours is a real mocha roll cake! Every other recipe I've found on RUclips calls it Mocha Roll cake but only uses coffee - they should be called coffee roll cake.

Lian Ng Hi the only thing that you need to conver in cups is the cake flour which is 3/4 cup plus 1/2 tbsp for the butter 25 g is 2 tbsp of butter the rest in is ml hope this help :D

Mary Farragher just lower the temperature of your oven , then about halfway cover the top with foil of put a baking pan on top to stop the direct heat, always check the middle if its cooked before pulling it out of the oven.

Hi, i baked this before and it was super good, but this time i will be using regular wax paper its not totally for baking it shows in the box that its for burger or sandwich i think the difference is the texture cos i bake ur marble the other day and the cake sticks to the wax. Rizzy Caselyn, it is not a good choice for baking. At high temperatures, the wax on the paper can melt and will transfer to whatever you are baking. The food grade wax is not toxic, but it’s a good idea to keep it out of your baked goods. The wax will transfer to your baking sheet and may require additional cleaning. The wax also has a fairly low smoke point, which means that any exposed wax paper will smoke while it is in the oven and there is a possibility that, if you are cooking something that requires a very long baking time or very high temperature, the paper could actually catch fire. If you use wax paper to line the bottom of a cake pan, it will not smoke but you will still have wax transfer.

I made this last night OMG it's so delicious. But while I'm doing the icing it took some time before it gets creamy or icing texture. Is there any reason why this happened? I wonder if the step on melting the egg white and sugar should I wait till it thickens coz I removed it as soon as I don't feel the sugar anymore.
Vivs thats right, you can take the eggwhite out of the ban marie as soon as there is no more granules of sugar , it takes a while for the icing to thicken sometimes it will look wierd before it gets better, using a hand held mixer takes a while compares to stand mixer , gald you like it

Butter separates from water and soggy. The coffee mix , I mix instant coffee with warm milk. Then make it cold. It happened with me three times. Every time I failed. LANIE AGUADO cake flour contains less protein that makes the cake lighter, I heard that in UK their self raising flour is also called cake flour, but here its not.

Every egg is different so we cannot go by the number of egg but what you can do is measure the eggwhites in a cup and use the principle 1-2-3 1 for eggwhite 2 for sugar and 3 for butter

How can I measure the 1/8 tsp of salt? Is it okay if I will not use the stand mixer for beating the egg white?
+Sabrina Wurstbach just get half of 1/4 tsp, you can use hand held mixer , or you can use a whisk it might be tiring but it will work
