It’s officially summer, and I am so excited for the long sunny days and yummy food! I recently saw a post saying on average, we only have 75 summers in our lives. So this summer, I had one goal, and that goal was to just be happy. So here is a realistic week in my life, making the most out of every day and every meal.

I love your pesto recipe and your love of experimentation in the kitchen :) I'll share my very inauthentic but very iron-rich recipe if you're craving greens (even as a Sicilian, I do what I want!!):
blend 2 c fresh spinach, 2 tbsp jarred pesto, 1.5 tbsp EVOO, 1 clove of garlic, 1 tsp-ish black pepper, 2 tbsp plain hummus (trust me!). if it's too thick, add 1-2 tsp water. add to cooked pasta w 1/4 cup pasta water, stir for a good 3 min with residual heat from cooked pasta, and serve :)

Tiffy, I don’t comment much on videos and content online but told myself recently I’d start supporting openly my favorite creators! I think as a fellow foodie and blogger that you are one of the best out there. You don’t just make food, you test and try new things and I love seeing you create and try your best to show us who you are in these vlogs. Many bloggers I feel shy away from vegetables too! I know you said you dislike salad but you incorporate vegetables in unique ways that I feel as an American aren’t really used here. While I love your short form content, your long form makes me so happy because we get to see more of you! But I’ll be honest, you could pretty much do anything and I’d still be one of your biggest supporters!❤

Basically my question is can it be replaced with a different vinegar?
It’s basically a mix of soy sauce to rice vinegar!! Around a 1:2 ratio if u make it at home!
