- Delicate venison leg with non-alcoholic sauce. If you need or want to cook without alcohol for some reason, you can look forward to a delicious recipe here.
Ingredients for 5 servings:
1 deer leg (about 1.6 kg without bone, about 1.9 kg with bone)
1 teaspoon salt
1 level teaspoon freshly ground pepper
1 to 2 tablespoons tomato paste
1 pinch of cinnamon
2 pinches of allspice (= clove pepper)
2 pinches of ground rosemary (or 1 tsp dried)
1 tsp thyme
2 bay leaves
4 cloves
5 juniper berries
1-2 tbsp butter lard
1 package of greens (= celery, leek, carrot, parsley)
400 g of onions
About 250 ml (freshly squeezed) orange juice
About 750 ml of vegetable broth
Oven:
1.) 130 ° C top / bottom heat for 3.5 hours
2.) then keep at 80 ° C warm until side-dish and sauce are ready to serve
Serve with potato dumplings, bread dumplings, mashed potatoes, ...
Canned Cranberries are also very tasty with the meat. With a teaspoon canned cranberries you can also refine the sauce if you like to.
